@@theunbearables I spent 4 years of my childhood in Tokyo (68-72) and Ajinomoto was everywhere. My Mom kept a bottle in the kitchen as well. It wasn't until the 80's MSG scare that I found out that Ajinomoto = MSG. It wasn't just in Asian foods as lots of restaurants of various cuisines used it. It's just that the Chinese restaurants used it in every dish.
In the late 80's my older sister took me to an authentic Chinese restaurant in Manhattan, which was staffed by chefs from mainland China, that I realized that American Chinese food is not real Chinese food. American Chinese is very heavy in oils which was very expensive in China - real Chinese food doesn't use as much - they invented the Wok which allows cooking using not just less fuel, but also less oil. This is also the time when oils and fats, and especially saturated fats, became public enemy nbr 1 for the health conscious. Personally I think its the heavy use of oils and fats, which generally aren't used that much in authentic Asian foods, that made a lot of Asian foods considered as unhealthy - the use of MSG was just one part of it but because of the MSG scare, the use of MSG was blamed for why Chinese food was unhealthy even though it was the use of all those saturated fats.

Some could be misled by original accidental process of making MSG. The boiling down method produces MSG in its form closer to its nature, no harsh chemicals used in producing it. It is my understanding that MSG can be produced at cheaper cost by fermentation, alkaline cookin,; the S part or Sodium may come from NaOH or sodium hydroxide which is a harsh chemical. This process can turn out MSG in a form so high in concentration. One teasoon of this can cause unpleasant symptoms to many. And one teaspoon of this possibly pure, MSG can be found in popular stir-fry dishes. MSG in its natural form sounds safe for daily diet. The chemically derived form sounds scary, don't you think?
