How to Make Lemon Curd

    Ingredients
    6 large egg yolks
    1/2 cup fresh lemon juice¹ 120ml
    3/4 cup granulated sugar 150g
    1/8 teaspoon salt
    1/2 cup butter cut into 8 pieces (113g)
    2 Tablespoons lemon zest²
    Instructions
    00:00 Introduction
    00:55 Combine eggs, sugar, lemon juice, and salt in a medium-sized saucepan. Whisk until well-combined. Transfer to stovetop over low/medium-low heat and add butter and lemon zest.
    01:39 Cook stirring constantly (do not let the mixture boil) until thickened and mixture reaches 160F (to make sure eggs are cooked all the way through).
    02:31 Remove from heat and pour through a fine mesh strainer into a container.
    03:01 Cover with plastic wrap touching the surface of the lemon curd to avoid a skin forming. Allow to cool to room temperature for 20-30 minutes then transfer to the refrigerator. Chill for several hours then use as desired.
    Notes
    ¹This took 3 whole lemons for me
    ²Zest the lemon before squeezing, it's much easier that way than trying to zest an empty lemon skin. Be sure to avoid the bitter white pith when zesting (don't grate all the way down to the actual lemon!)
    How to Store
    This homemade Lemon Curd will keep in an airtight container in the refrigerator for up to two weeks.

    i made this lemon curd for the first time last night..currently eating it from the jar 😅 i put half the sugar but it was still really sweet - i think it's bc the lemons from my backyard are super sweet!! nevertheless I'm really enjoying it 😍😍 thanks for this lovely recipe ♡♡♡

    Hello,
    Thank you for the great video. I made the lemon curd and I triple the ingredients. It taste good but when I placed it in the refrigerator for like 6 hours it’s still runny but taste good. Is there anything I can do to stiffen it up. Again I tripled the ingredients. I hope I was able to do so 😊

      Oh no! I'm so sorry to hear that! It may have just needed to cook a little bit longer. I'm not sure if you could reheat it, but it could be worth a shot. It might curdle it though.

    Hi Sam...Can I add a bit of corn starch to make a bit thicker as I would like to add it to my buttercream? If yes. how much cornstarch would you recommend?

      Hi Sue! You could, but it thickens significantly as it cools. I think you'd be fine without it! 🙂

    Best way to eat lemon curd is straight from the jar!
    When making recipes that only use half an egg (like lemon curd with just the yolk, or macarons with just the white), do you bake something else simultaneously to use up the rest of the egg, or just discard it? Or can the yolk/white be refrigerated until a later time?

      It is soooo good straight from the jar. I know some people save their egg whites. I’m not sure how they long they would be ok to keep though. Personally my extras go to my 4 legged friends. 😊

      I know I'm 2 years late but I do my egg whites with sauteed spinach and onions for breakfast. Yes you can store them but I wouldn't recommend refrigerating longer than 2 days. The taste changes.

      I know I'm 4 years late to the party but maybe will help someone else. I make homemade macarons with the whites and curd with the yolks. If you're not fussy about perfect macarons then they're easy to make - they're still delicious if they crack or are not perfectly shaped.

      I'm not sure how it would go for a lemon meringue pie. It would be pretty tart, but you can double the recipe. :)

    Do you have to use butter? Seems like I used it when I made curd once and it was too buttery. It lost it's "fruity" flavor.

    What is the difference between lemon curd and lemon pudding?

      It has to do with the way that it is thickened and the ingredients used. The eggs are the thickener here in the curd, but in puddings, typically, cornstarch is used as the thickener. Curd is going to be a bit tangy while your pudding is typically going to be sweeter. :)

      O no! I’m not sure it can be fixed. If you let it cool in the saucepan this can happen if your pot is reactive. 😔

      Oh no! The eggs can get a scrambled flavor if the curd is heated over too high of a temperature or too quickly 🙁

      Hmm I haven't tried it. Honey can burn easily when cooking so that would be my only concern. If you do try it I would love to know how it goes. 😃
