It’s best to keep same sex tanks? I have 3 males now. I may purchase up to two more goldfish. It would be safest to buy males?
If you can, then the same sex tanks are definitely good to try and do if you don't intend to breed. Females may have slightly better body shapes, but I would opt for males if you can.

Can you mix breed different type of oranda?
Yes, definitely. Cross breeding is good to maintain strong genetics and hybrid vigour between fish.
The more u crossbreed goldfish the more it’s immune system is stronger . So I would always recommend to crossbreed
I believe you can breed any goldfish with any other type of goldfish for example an oranda and a shubunkin can breed
