Green Pea Fritters with Mint

- Eaten hot or cold, these colourful Green Pea Fritters are easy to make and a fun way to get kids to eat those vegies. Try adding a few to the school lunchbox.
Turn frozen peas into a tasty meal with the addition of a few basic ingredients and whatever herbs you have at hand.
The quantity of herbs is just a suggestion based upon my preference but play with them to create your own signature flavour profile. I like lots of mint, so these are quite mint forward.
GREEN PEA FRITTERS WITH MINT
2 cups frozen peas, defrosted
1 tbsp fresh parsley
1 tbsp fresh basil
1/2 tbsp thyme
a good handful of fresh mint
1 clove of garlic roughly chopped
2 good pinches of salt
freshly cracked pepper to taste
2 large eggs
1 spring onion/green onion/shallot - to taste
1/2 cup plain flour/ all purpose flour
2 tbsp oil for frying - I use a high heat olive oil
Into a bowl place half of the peas, the herbs, garlic, salt and pepper.
Using a stick blender, blend into a thick paste.
Add the reserved peas back into the mixture.
Beat the eggs slightly and add into the pea mixture.
Add the sliced spring onion (to taste) and mix together with a spatula or wooden spoon.
Add the flour and combine well. Don't over mix. The resulting mixture should produce a thick batter.
Heat 2 tbsp of oil in a frying pan over medium heat and fry the fritters in batches. They can be made into whatever size you want. By using a dessert spoon I make about 8 - 10 fritters.
Serve hot as a main meal, drizzled with a simple dressing, with a salad for a tasty lunch, cold in a school lunchbox, or keep a few in the fridge for a quick and healthy after school snack.
