Ingredients:
* Fresh turmeric - 150 gms (grated)
* Green chillies - 3 nos (slit)
* Red chilly powder - 2 tsp
* Chekko sesame oil - 100 ml
* Lemon juice - 2 nos (juice)
* Asafoetida -1 tsp
* Salt
Ingredients: Roast & grind
* Fennel seeds - 1 tsp
* Mustard seeds - 1 tsp
* Fenugreek seeds - ½ tsp
* Cumin seeds - ½ tsp
* Nigella seeds - ½ tsp
* Pepper - 10 nos
Method:
1. Wash and peel the fresh turmeric.
2. Grate or cut the fresh turmeric into small chunks. Set aside
3. In a wok, dry roast all spices have given under ‘roast & grind’ ingredients. Set aside to cool.
4. Once cool, grind to a coarse powder.
5. Mix cut/grated turmeric, salt, chilly powder and the coarse ground roasted powder in a bowl.
6. In a wok, heat sesame oil. Once hot and not smoking, add asafoetida and pour this hot oil over the turmeric and spices.
7. Mix well and set aside to cool.
8. Transfer into a clean and dry glass bottle and store in the refrigerator.

In rajasthan, they make a sabji with fresh turmeric, with lot of ghee oozing.
First time I heard this pickle, will try it with turmeric.
I harvested turmeric just 2 days before pongal. So, we all had very fresh,very large turmeric leaves for Kanu. With the same happiness, made this turmeric pickle😁

Nice👌I usually pair it with mangai inji or simply mango pieces and add in some slit green chillies,lemon juice and salt. This oil free pickle stays fresh for a week when refrigerated

Hi,. I prepared fresh turmeric root pickle following your demo . But, instead of cutting the root into pieces I grated them. It came out very nice with fine aroma and tasty too.

இப்படி கூட செய்து பார்க்கலாமே..... மஞ்சள் கிழங்கை துருவி கூட காரத்திற்கு தேவையான பச்சை மிளகாயை பொடியாக நறுக்கி, தேவையான அளவு உப்பு சேர்த்து, ஒரு எலுமிச்சை சாறும் கலந்தால் ஊறுகாய் ரெடி. மஞ்சள் கிழங்கு டன் துருவிய இஞ்சி + மாங்காய் இஞ்சி சேர்த்தும் ஊறுகாய் செய்யலாம். மிகவும் சத்து நிறைந்த எண்ணெய் இல்லாமல் ஊறுகாய் ரெடி. வாய்ப்பளித்த தற்கு நன்றி 🙏🙏
