RECIPE AND INGREDIENTS:
2 medium onions.
olive oil
Fry for 5-7 minutes.
2 carrots.
Fry for 10 minutes, stirring occasionally.
2 peppers.
Cover with a lid.
Boil 10 minutes.
Zucchini 1 kg.
salt 1/2 tablespoon.
Black pepper.
Cover with a lid.
Boil 12 minutes.
Mix and cook for 5-7 minutes.
Don't cover.
3 eggs.
Salt.
Black pepper.
milk 300 ml.
flour 4 tablespoons.
Cheese 200 gr.
Mix well.
olive oil
Vegetables are ready.
Bake in the oven at 180°C (350°F) for 35 minutes.

Anna, thanks for sharing your results of giving this recipe a go. I'm assuming the chose of which cheese to use is pretty flexible, but...just curious, which cheese did you choose ? For me, since I've been on a roll when it comes to mushrooms, and garlic, I'm going to saute some and pour them over my casserole serving. O.k, now I'm hungry. Heading for the kitchen. Gosh, I wish I had some french bread.

That looks delicious I love zucchini with other vegetables I make mine similar but instead of making the eggs empower mixture I add a jar of tomato juice or tomato sauce and put it over rice or noodles just delicious

I have made and enjoyed this dish for many years except without the milk and flour. We just push the peppers to side of pan and add scrambled eggs to cook then mix peppers and cooked eggs together and enjoy. So delicious!

Love how you posted your recipe with instructions every few lines, now just wish the ml's & gr's measurements were also posted in American measurements, cups, Tbs, tsp etc.....
it's easy enough to translate the grams etc to US measurements - your phone or smart device can do it for you.

Reminds me of a crustless quiche, which I LOVE!! Sub these veggies with onions (or leeks), yellow squash, sun dried tomatoes, cooked and crumbled turkey bacon. Then bake and top with more cheese, crumbled bacon and chopped basil and green onion! Serve with fresh melon slices and crunchy sourdough toast rubbed with a garlic clove then buttered. Yummy! Sounds like dinner tonight!
