I tried 3 times tina.. different recipes and when my flour hit the egg yolk it just lump up dried.. i not sure how they make it runny and smooth.. i try stirred it fast and all doesnt help. I try to be very precise in all my measurement it didnt help . I start wonder is my whisker prob or simply me hahahaha

But look how brown they were on the outside, The pan just cooked very uneven, thats why they were stuck

Okay so I watched the original video of this recipe last year, tried twice and failed, the result was the same as your first attempt!!
Then I was lucky enough to see this video in my suggestions, I watched it and tried again adding one more egg white, and I also added lemon juice in the whites before whipping them for more stability. AND used a piping bag!
THANK YOU!!! I made perfect cafe-style Japanese pancakes and it’s thanks to you 🥰 I don’t have to go to Omotesando every weekend, wait in line for 1h and spend ¥1500 now that I can make them at home 😭

First pancake fact: the first pancake you make from any batch is always going to be the worst. It's used to test the heat of your pan to make sure it's not too hot or too warm. Dont fret when your first pancake doesnt turn out right.

I love making these pancakes! A little tricky at first but its all worth it at the end ✨
Pro tips:
-to remove egg yolks use an empty plastic bottle to suck it out
-wait until there are bubbles on the top of the pancakes to flip
I knew about the bottle but just easy enough to separate it with your actual hand and let the white slip through your fingers.
Didn't no about waiting for the bubbles though so thank you.
AFTER THE FIRST MIX, WITH THE WIRE WHISK, YOU NEED TO SWITCH TO THE RUBBER SPATULA AND GENTLY, VERY GENTLY FOLD IN THE REMAINING MERENGUE. YOU DON'T WANT TO KNOCK THE AIR OUT OF THE EGG WHITES AND MIXTURE. YOU CAN ACTUALLY MAKE THEM WITHOUT THE BAKING POWDER. THE EGG WHITES ACT LIKE A MECHANICAL LEAVENER. THE BAKING POWDER STABILIZES THE MIXTURE AND KEEPS IF FROM DEFLATING.

I thought i was crazy adding more egg whites when im not suppose too, i thought i was the only one! This bideo encouraged me to use a piping bag too
One useful tip from the recipe I use for these pancakes is to add a little cornstarch to the egg whites near the end. That helps them hold their shape a bit more, so the pancakes retain their height better. 👍 Never going back to regular pancakes after learning how to make fluffy pancakes!

So I made a normal pancake not a fluffy one and it turned out to be bitter.. I did not over cook it at all but I don’t know why.. is it because I added to much baking powder?
Though you already greese your pan. You should use non stick because the pancake mixture will suck the oil or butter on the pan.

When using that electric mixer you don't have to press down so much, that might cause tension on the equipment and it tend to slow a little

How did you make them so fluffy ?? i've tried for 4 times already and every single time i lift the lid or when i flip, my pancakes drop to the base of the pan...
i tried : adding more flour, higher & lower heat settings, tried cooking for longer because i thought that maybe the dough was too soft but that didn't work either... any suggestions ?
Hello im not a pro but i think this tips might help:
-try adding 1/4 tsp cream of tartar in the egg whites before whipping it
-dont overwhip the egg whites bcus it will cause separation. Stiff peak is enough :)
-when u add the whipped egg white, slowly FOLD in the yolk mixture with a spatula. DONT MIX, fold only, and dont overdo this bcus the structure might really fall apart and remove its fluffiness when overmixed.
-try to add 1 big fluffy scoop of mixture on the pan then cover for like 3mins, then add another scoop on top of it so it will be bigger and fluffier.
I hope this would help u! It took me several tries before i got the perfect pancakes :) enjoy the quarantine lyf! ^_^

You should have seen my first attempt. Anyway it’s become a ritual now to make these Japanese soufflé pancakes at the weekend and I think I’ve become obsessed with making them perfect. I’ve watched lots of videos now and have noticed 2 types. 1 - if you are using the quantity of egg white from 2 eggs then the only way to make them big is using a piping bag.
2 - doubling the amount of egg whites that you would normally use against the same amount of mixture. Thanks again for your video. How about another vid with the second method.

Home cook here. You needed to wait until the top and sides look dry before you flip the pancakes. Good luck and don't give up. You will be a real cook in no time.
