  • HOW TO MAKE SPINACH FATAYER | Lebanese Spinach Pies | Fatayer Dough | Ramadan Recipes for Iftar 2021
    In this video, we show you How to Make Spinach Fatayer. Fatayer are little appetizers that are popular in Lebanon that can be filled with various fillings including spinach, cheese, and lamb mince. Here we have made Spinach Fatayer, which are small Lebanese Spinach pies with a soft bread-like dough. We show you how to make the Fatayer Dough that can also be used to make Feta Cheese Fatayer and Meat Sfeeha (links to recipes coming soon. They are perfect Ramadan Recipes for Iftar 2021.
    To make the Fatayer Dough you will need:
    50ml warm water
    1 sachet yeast (7g)
    1 tbs sugar
    2 cups warm milk
    1/4 cup olive oil
    1 cup strong bread flour
    1 tsp salt (or to taste)
    Enough All-Purpose flour to form into a dough (we used 4 and a half cups)
    *if you don't have bread flour then you can use just all-purpose flour (total 5 and a half cups of flour for this recipe)
    To make the Spinach filling:
    3 tbs olive oil
    1 cup finely chopped onions
    salt to taste
    1 medium-sized tomato
    300g of wilted spinach
    1 tbs sumac
    1/4 tsp black pepper
    1/2 tsp paprika
    1 tsp Lebanese 7 Spice
    2 tbs lemon juice
    1 tbs pomegranate molasses (*use extra lemon juice instead if you don't have molasses)
    *Lebanese 7 spice is a blend of spices that includes: cinnamon, cloves, cumin, fenugreek, caraway, cardamom, ginger, nutmeg, garlic, salt, coriander, turmeric, fennel, bay leaves, pimento, and chilies). Lebanese 7 Spice is available in Middle Eastern shops and most supermarkets in the UK. If you can not find it then you can add some of the spices listed above as per your taste. We would add 1/4 tsp cumin powder, a pinch of cinnamon powder, a pinch of turmeric, chilies to taste, and 1/4 tsp garlic powder)

    Very nice! I liked how you managed to shape it into triangle form. Spinach filling is good but if i make it, i will also add paneer or feta in it.

      Thank you so much! You can definitely add cheese to it since that is quite a common combination for the spinach fatayer. We used just spinach for this recipe since we also made a separate cheese fatayer (recipe coming soon).

      Ahh that sounds great! Insha Allah you will really enjoy them and they are perfect for iftar. We have written some notes in the description on which spices you can use instead in case you are not able to find the Lebanese 7 spice, but it is quite commonly available so hopefully, you will be able to find it. Plus it will come in handy for the other Fatayer fillings that you can make - recipes coming soon!

      Yes we have frozen them in the past and they were great after re-heating.
