Very nice video . My only comment is that there are so many places that you should have use a torque to get the exact value. It’s not worth the risk of damage.

Seasoned mechanics have their hands calibrated.

All rims are compatible. It is just a different hub. Those are Extralite's Hyper Lefty 2's

PS Try to use 3-4 zipties through an esi grip. It must be much easier to pull them on a handlebar.

Your chain is too short. The Rear derailleur is tight and has too much tension when the chain is on the biggest cog. Better replace the chain or add up if not the RD will fail in the long run.
Looks like the B-limit wasn't set yet (adjusts how close the upper pulley wheel is to the cassette). Chain length looks fine in the 10t cog.

i stopped watching when you put DOT5 in Shimano brakes. the owner should make you replace the brakes with a new set
