VEGAN GUMPASTE or SUGAR PASTE Vlog 44 by marckevinstyle

  • Marcs Vegan Gumpaste or Sugarpaste
    No need for Mixer, Microwave and stove
    No Eggs, No Gelatin and easy to make
    Ingredients:
    2 Cups Sifted Powder Sugar/ confectioners Sugar
    1Tbsp to 1 and 1/2 Tbsp Tylose powder or CMC Powder (you can adjust the tylose powder depending on how hard you want it)
    3/4 Cup sifted powder sugar (For kneading purposes only)
    2 Tbsp Corn Syrup
    4 Tbsp Room Temp Water
    Procedure:
    1. On a mixing bowl or container sift 2 cups of confectioner sugar.
    2. add 2 tbsp of corn syrup and 4 tbsp of room temp drinking water or sterilized water.
    3. mix well until you get a royal icing consistency make sure all sugar is melted and well combined or incorporated.
    4. add 1 tbsp to 1 and 1/2 tbsp tylose or cmc powder, mix well until thick, the amount of tylose or cmc can be adjusted based on what are you making and how hard you want the paste to be, for sculptures i siuggest 1 tbsp only.
    5. sift 3/4 cups of confectioner or powder sugar and add gradually, at times you wont be able to use all, this is just for kneading purposes.
    this paste requires no resting after you make it you can use it right away.
    Storage:
    1. after making, store on plastic wrapp or film, then put on another airtight container and store inside the ref or chiller, this will last 1 to 3 months on paste or dough form, my advise divide on smaller chunks so its easy to use, take out only what you need and thaw at room temp for 30 min to 1 hour before use.
    2. when made into flowers or figures this last 1 to 2 years protected from humidity.

    When you make flowers with this paste, can I store them in the fridge or leave outside? I live in the tropics weather 24-30 degrees

      Flowers that are made and dry should be kept at room temp, protected from humidity, the paste or dough howvesr should be placed on ref or chiller

    Dear Marck, Iam from Austria and I found your video accidently. I want to start with gum paste roses. I want to make this gumpaste. Its not easy to get corn syrup. Can I use

    I've tried several recipes of gumpaste. They work out okay if you're rolling out for flowers and such, but when it comes to making figurines, animals, etc., the gumpaste has cracks in it. It's not smooth at all. What am I doing wrong?

      If you use glucose, it will be like rubber in texture and will not harden that much :)

    Hi Mark, what brand of corn syrup you used. I live in NZ and we find queens brand of glucose syrup ( but the ingredients details call it as corn syrup) and wilton is calling it as glucose syrup but the details say it as corn. Quite confused.

      Hi it varies depending on the condition on your area you can try several of my recipes to test on your area, the vegan gumpaste is good for hot weather but melts on humid or rainy days because of humidity or moisture in the air, the maco paste is good and best for rainy and stprmy weather because it does not melt, however it has no taste so you need to add flavoring

      In texture glucose is thicker than corn syrup. Which makes a paste different if you use glucose it will be more firm and like rubber compared to corn syrup

      I haven't tried the tylose syrup all I use is powder, but I believe it works same, start with half qty of that tylose syrup :)

      Hi if you use glucose it will be rubber like :) if you use corn syrup it will dry hard :)

      If dough form or paste form better if chiller because it will be harder as days pass by, even on airtight container, the reason why it's best stored in chiller is that when you take it out, take only what you need and let it thaw at room temp for 30 min to one hour, (in this process the paste will moist and the paste will absorb back the moisture it needs from the cold to room temp changes) then it will be easier to knead and form :))) if made into flowers or figures and dried, it will last at room temp airtight container for 1-2 years, if made into flowers and figures also and dried don't put it back inside the ref or chiller because it will melt :))))

      The humidity may be factor Lalo na pag gumpaste, you can add confectioner sugar pag sticky, pag humid Naman I suggest use maco paste
