. Here's a summary of the ingredients and procedure for making Moong Dal Ladoos:
*Ingredients:*
- 500g Yellow Moong Dal (split green gram), soaked for 3-4 hours
- 400g Ghee (300g initially, 100g later)
- 700g Sugar
- 350ml Water
- 2 pinches of yellow food color (optional)
- Cashews and Raisins for garnishing
- Khoya (condensed milk), ground (quantity not specified)
- Ghee for roasting dry fruits
- Pistachios for garnishing
*Procedure:*
1. Wash the soaked moong dal thoroughly and remove excess water.
2. Grind the moong dal into a fine texture using a mixer grinder.
3. Heat 300g of ghee in a kadhai and add the ground moong dal. Roast it until it becomes dry and separates easily.
4. Cover the kadhai for 10 minutes to avoid sticking and then continue roasting until the dal is well roasted.
5. Add the remaining 100g of ghee and continue roasting until the dal reaches a halwa-like consistency.
6. Grind khoya in a mixer grinder to make it smooth.
7. Make a 1-string sugar syrup using 700g sugar and 350ml water.
8. Mix the roasted moong dal with the sugar syrup and add the ground khoya. Stir well.
9. Roast cashews and raisins in ghee and add them to the dal mixture.
10. Mix everything thoroughly, cover, and let it rest overnight.
11. The next day, the mixture would have thickened. Add chopped pistachios.
12. Shape the mixture into ladoos.
13. Garnish the ladoos with pistachio pieces.
14. Serve and enjoy!
