What a wonderful way to celebrate your grandson. Happy Birthday is he February born.. Mine is February 17th. As a vegan I do not cook or handle any animals. Also it is not aloud in my house because of the vibrations and karma as I practice being doubly non-violence, but I understand why you do, to be inclusive. It does not become a problem for me. I believe they call that dish a Frataata. Looks good I could use an egg replacer and remove the onion and garlic. Oops I forgot to say at the moment I am in Ghana, but next month I could be somewhere else. Salaam
