This kind of reminds me of a recipe I make for my mom, dad and brothers. They all request it for their birthdays. Yes, I'm 24 and I cook every holiday dinner for everyone because I'm the best cook in my family, I owe a lot of that to you Laura!
My chicken recipe is..
I fry up an red onion, red and green bell peppers, and jalapeños until they develop nice color and become translucent. To that I add my fresh garlic and cook for a minute or two.
Then, I add some Rotel tomatoes and some good quality salsa and let it simmer for a few minutes. I season it all at every step.
I put chicken breasts into a casserole dish and pour my mixture over it and cook it covered until my chicken is done.
I serve it over Angel hair pasta. IT IS SOOOO DELICIOUS. I hope you try it Laura, or any viewers reading this. It really is an extraordinary recipe. 😊👅❤

In the last 6 months, the city has added compost to our weekly collection. I have been putting all organic matter into the composting bucket the city issued. Potato peels, eggs shells etc. But, it has shown me that I also waste good food. Tomatoes I have let go bad, avocados that I didn't eat in time. I have resolved to do better and waste less food. I found this video helpful toward this endeavor.
I do this all the time in my crockpot! I don't add extra water or olive ok just a jar of salsa and some chicken breast! Turns out perfect every time! Thanks for sharing!:)
Hey Laura! I just wanted to tell you how much I love your show here on CZcams. I myself love cooking and am a foodie at heart as well and your my favorite foodie to watch here on youtube. I love how your so glam and girly but still down to earth at the same time like me. Whenever I want to make something I always looks at your videos because I know it'll be delicious. I've been dealt very bad cards in my 19 year old life and find it hard to stay positive. But when I watch you I can see the positivity and imagine what my life will be like one day if it gets better. I love how simple and delicious everything is (except for the baklava, that shit was hard) but everyone keeps asking me to make it again because it was delicious. I love watching your videos and recreating your recipes :) I would love to see more videos like this, with using left overs in the fridge (like shredded cabbage, cheese, a couple strips of bacon, wrinkly tomatoes, jars of salsa or pesto or whatnot - anything that hasn't gone bad yet, but might soon).

this is really similar to a salsa chicken we make often at my house! but ours is literally just salsa and chicken breast in the crockpot all day. and we do the same things with it! usually it goes into tacos or on rice. mmm!

I actually did the chicken in my left over salsa and it tasted awesome. I added uncooked rice to the rest of the salsa (after taking out the chicken) cooked on low for about half an hour and it was delicious. I did not need to add anything to the rice. The flavors of the salsa gave enough flavor as is!!! 😍

Yesterday I made the Salsa Chicken - it was delicius.
And I didn't want to throw out the remaining Salsa, so I added a little more Water and cooked some Rice in it - that was the best part on the whole dish!

I do this all the time in my slow cooker. I use black bean salsa.
I do this method, but I use a pressure cooker to cook my chicken. It comes out great!
I do something similar. I take b/s breasts to a crockpot, pour a good salsa over 1/2 a jar-and garlic salt and pepper. I cook it till its done and shred it. It's so good. I don't dilute or drain salsa out, it's totally yum.

I've made this before, it's delicious, but I don't find the need to add the oil it still comes out tender.
My friend suggested to also use chipotle in adobe when poaching the chicken!
How do you reheat cooked proteins? Usually when I reheat chicken in the microwave it tastes a little weird.

I know I'm not Laura vitale . But I've been told I'm a good cook . So here is what I recommend. Spend a lot on enamel cast iron Le creuset . There the best all clad is also good .

What's the best way to reheat this chicken throughout the week?

I do this in my slow cooker...cut the breasts in half (lengthwise), a jar of hot salsa, little bit of chicken stock and any extra spices (garlic powder, onion powder, cayenne, salt and pepper). Cook on low for 4 or 5 hours, take it out, shred it, put back in juices. If juices are too thin, I add some cornflour while shredding the chicken.Eat with wraps, salad, lettuce wraps, anything

This can be done in the slow cooker on high for 3-4 hours which will make the chicken so tender that the chicken just falls apart. This is great for chicken tacos or quesadillas.
