Perhaps collections starting treehouse of horror I-V and then there on with collections 2, 3, and to the current episodes and from there on. A documentary and interviews would be nice, especially for the first batch, and see how Matt Groening and his fellow writers look back on those specials. Maybe some fans as well like Matt Braly or Alex Hirsch, or even J.G. Quintel.
