  • In this video I demonstrate how to make a perfect pie crust.
    Plain Pie Pastry
    (Recipe from Better Homes and Gardens New Cookbook which was a wedding gift in 1979. Not so new anymore!)
    I have a adapted this recipe to use two fats, shortening and butter which I believe makes the perfect pie crust, tender AND flakey.)
    1 ½ cups all-purpose flour
    ½ teaspoon salt
    ¼ cup shortening
    ¼ cup cold unsalted butter
    4-5 tablespoons cold water
    Combine flour and salt with a whisk. Cut in the shortening with a pastry blender till like cornmeal. Cut in cold butter until pieces are the size of small peas. Gradually sprinkle ice cold water over flour mixture while stirring with a fork. Use as little water as needed to form the dough into a ball. Wrap dough in plastic wrap and chill for at least 30 minutes. Remove dough from refrigerator and allow to set at room temperature only until soft enough to roll out. Flatten dough on a floured surface to form a small circle. Roll dough into a circle at least one inch larger than pie plate. Dough should be about 1/8 inch thick. Fit pastry into pie plate. Trim ½ to 1 inch beyond the edge of the pie plate. Fold under and flute edge. Prick bottom and sides with fork. (If filling and crust are baked together, do not prick.) Bake at 450 degrees F for 10 to 12 minutes or till golden.
    I believe I purchase the pie weigh from a local school fund raiser flyer.

    I've been making pie crust for over 50 yrs. You hit all the important steps in pie crust making. Two, most important things to remember.. 1. Keep everything cold. I actually use a stainless steel bowl which I put in the freezer before using. I also have a small bowl of ice water to spoon from with ice cubes. And I use disposable gloves when bring the dough together so my hands won't warm the dough. And, of course, keep butter and crisco cold. 2. Don't overwork the dough. I just bring it together, gently with my hands, place it in plastic wrap and put in the fridge for 30 min. Then it's already to roll out. Flakiest crust you'll ever eat! Yours looks fantastic.

      Absolutely spot on. Cold shortening, cold butter, and ice water. If the kitchen is too warm, work fast, and put the pie shell in the frig to chill it a little to keep it cold, then the oven. You do want small flects of butter to keep in the crust. When heat hits it, they burst and make the crust flakey. Don't overwork the dough. When you dock the dough with a fork, make sure you do all the way through. Use pie weights. Watch the piecrust in the oven continually. Lastly, when you set your oven temperature, it will beep stating it is up to proper temperature. IT IS NOT. Use a seperate oven thermometer, keep it inside at all times, and read that for proper temperature before you put the shell in the oven, for all cooking/baking goods. Don't trust the beep. I have a Jenn-Aire oven and it beeps prematurely.

    Good tutorial. I am a lard pie crust baker and always have perfect flacky crust . Glad you are helping young bakers know the process for a good crust.

    If you freeze your shortening and butter and then just shave it into your flour mixture and then just mix it up with with a spoon or something. It works a lot better

    Thanks so much for sharing your tips on pie crust! I saw someone on YT do a test once where she weighed flour obtained from different ways of scooping, spooning, weighing, etc. It was surprising the actual difference it made. She vowed to forever take the time to weigh the flour, if called for. Other ways of measuring added a surprising amount of extra flour, which could toughen some recipes like cakes, breads, etc.

    That is one thing my kids could always tell if my pie crust was homemade or store bought. They always preferred homemade and would get upset if i hadn't made it myself.

    Because your counter is high, I would put that bowl into the sink, it would make cutting the butter into the flour easier.

      What an awesome idea! That would have made it difficult to film for my video, but I will definitely remember this tip next time I cut the flour in by hand.

    I sandwich my pie crust in between sheets of wax paper,and roll it. Then I loosen one side then flip it over and take off the wax paper. Then I place the pie pan on top and flip so the pie crust goes into the pie pan.

    Just freeze the butter and shortening it saves a lot of time. Then you can just mix it lightly into the flour. Dan

    Can you use half lard instead of the shortening? For health, I would prefer not to use shortening

      Shortening in a can is the same as the shortening in the sticks. The sticks are just easier to measure.

    I’ve been trying for years to make the perfect pie crust. I did a couple of times but not every time.

      I have had this set of bowls for several years. I believe I bought them at TJ Maxx or Tuesday Morning. I think they are KitchenAid so you may find them at Target or Walmart. We can buy just about anything from Amazon these days.

      I usually chill before rolling it out. I just forgot when making this video. When in a hurry I have skipped chilling the dough but it is always best to chill the dough before rolling it out.

      I did forget to say to chill the dough for 30 minutes before rolling it out. I went back an added a recipe and talked about this in the description. Someday I will remake this video. I would change several things. I am just getting started and I know I am going to make lots of mistakes.

    too much work and too much time to incorporate the crisco and the butter. Take a hand grader and use that on the large flakes. I works so well and so easy. Time saver.

      I have tried that before but the butter warmed up too much. I saw someone grate their butter and then rechill it. I may try that someday, but honestly, I make my pie crust in the food processor now. I plan to make a video doing just that. This video was to show the traditional way to make a pie crust. The homemaking teacher in me felt that was where most people should begin and then move on to other methods.
