Snack Hacker with George Egg - Everything Bagel Seasoning with Erica Wides

Volume 11, Episode 2. George Egg is the Snack Hacker, demonstrating fast, easy, innovative ideas for tasty bites. Today he’s joined by chef and teacher Erica Wides from Brooklyn. Erica creates brilliant short punchy cooking lessons on Instagram. You’re sure to have seen her microwaved poached egg video which went crazy and got over 35 MILLION hits. She’s got style and humour and she’s so watchable. George and Erica talk about EBS - the delicious seasoning on Everything Bagels. George makes it, grinds it to a powder, and puts it on crisps, or chips if you’re from the other side of the pond.
INGREDIENTS:
2 tbsp white sesame seeds
1.5 tbsp black sesame seeds
1 tbsp poppy seeds
1 tbsp garlic granules
1 tbsp dried fried shallots
2 tsp salt
METHOD:
Toast the sesame seeds at the same time in a dry pan until the white ones start to take on colour which means the black ones will be done too. Take them out of the pan. Mix with everything else, crushing the shallots between your fingers into a fine crumble. Test the seasoning, though bear in mind you want it pretty salty. You can put it on anything - fried eggs, salads, and it’s great sprinkled on homemade bread before baking of course. You can also grind it into a grey dust and season unsalted crisps with it. Amazing.
