- Sriracha is a Hot chilli sauce made from sun-ripened Red Jalapeño peppers. The peppers are fermented and mixed with sugar, vinegar, and garlic. Awesome flavor with a medium burn! Great as a dipping sauce for seafood, and especially great with crispy spring rolls. No wonder Sriracha is a favorite around the world!
Recipe
∙ 1577grams Red Jalapeños
∙ 32grams sea salt (2% weight of peppers)
∙ 16grams celery salt (1% weight of peppers)
Ferment for 8 weeks @ Room temp (Burping the container everyday)
∙ 200grams fresh garlic
∙ 220grams white sugar
∙ 350ml white distilled vinegar

Excellent. Nothing beats a fermented hot sauce. I have 400 chilli plants and every year I make about 40 litres of this then bottle and sell after fermenting for 3 months. I store it in 20 litre buckets. Better than anything from the store and zero additives or preservatives. I then take small portions to make other flavours like pine apple lime, mango pickle, beetroot chilli, garlic onion and vege pickles.

Hi! That is correct. Burping keeps it from building up gas and the bottles from exploding.
