As an Ex-Subway employee, here's a few pointers!
1) Cut the tops & bottoms off your bell peppers, then run your knife around the inside edge to get the white part off.
2) Bread dough is rolled in an dry italian seasoning, no butter required! Then we'd score it, proof it and just before we put it in the oven, we would sprinkle shredded cheese on top!
3) Steak came pre-cooked in a bag!
4) Bread gets cut in a V so top & bottom are together to catch stuff!
5) We actually start with meat & cheese, then toasting, then veggies & sauces!
6) Up here in Canada, we used to make party sized subs that were about 6 feet long!
7) Meat & cheese go on the top part of the bread with the sauce, veggies go on bottom!

Apparently the 6 foot is done in the uk to but luckily never had to make it thank god. And his process was defo along longer as we obvs don’t make everything from scratch
Similar to the USA in the South. Mostly everything came precooked or packaged, like lettuce and the Philly steak. Sauces are in a big bag that squirt into a bottle, but we cut, onions, tomatoes, cucumbers, and other fresh veggies. The bread here came pre-ready, we only had to proof it before baking, no added cheese, no added seasoning, just proof and done. The base was also meats then cheeses, asked for toasted or non toasted at that point. Some people(myself) likes all my veggies toasted with my sandwich, and my lettuce. Once everything is done heating, sauces are usually last before the big cut. I haven't worked there in 4 years but I remember all the smells of food.

Ok i have a hack for cutting the onions: since the juice is attracted to water, the first place is usually your tear ducts. Just put a damp paper towel on your cutting board!

My recommendation for dealing with both yellow and red onions is to have a peppermint or mint flavored gum(it doesn't have to be gum just as long as they have the flavor of the mint) while cutting them.😅😊

I worked at subway for 2 years.. your doing good ! Although we made our bread with a parmesan and herb powder we rolled the dough in then baked! But that looks delicious

As a subway employee I can tell you this;
We start with the bread, cut it and ask what you want on it
Meat goes on next, followed by cheese. If it's toasted, it goes in. If not it moves to salads.
Then sauce, salt/pepper, cut and wrapped.
Otherwise, looks super fricken good! As always though

Herbs and Cheese bread has no butter involved, we just use a spritz of water and roll it in a premade parmesan and oregano mix. The cheese we sprinkle on top is also just a blend of cheddar and monterey jack. We don't cook our own steak, it comes precooked. We do the meat and cheese first, then toast it if the customer wants it toasted. Generally, at least at my location, we don't rely on the "set" veggies and let the customer choose whichever veggies they want, same goes for the cheese.

When I worked at Subway, we do the Julienne, allumette, or french cut using the machine. That way we can finish 20 kg of onions in less than 30 minutes. But the aftermath was, everyone who work at the prep kitchen (behind the scene team, not the sandwich artist) will ‘cry’ from the onion for the whole hour 😂 tasty should get the machine for Alvin 😉

When cutting onions breathe through your mouth first then out through your nose, it helps a lot!
Hey Alvin. A tip for you when you cut onions: you cut them in halves and then you rinse them in cold water. The water helps the gases in the onions to not spread as fast in the air, thus preventing you from crying too much. The onion you've already cut, should be put in a bowl with cold water until it's ready for whatever next you are making :-) Happy cutting :-)

Id love to see a giant burekas, theyre basically just puff pastery with filling but theyre a common treat where i am. The usual filling is a blend of feta- cream- and mozzarella cheese, baked with an eggwash and seseme seeds on top.

We have a herb seasoning that we roll our italian bread dough in and then we proof our bread for about 30 minutes and the put our monteray jack cheese on it then bake it
I worked many subways in morgantown and i swear the red onions they get at subway are way stronger then ones u buy at stores i was literally crying
