Really any airbrush will work. I haven't found one that I like better then the others.
Amazing cake Mary! I do have a question. What do you do when you have to deliver a cake like this to a Wedding Venue say like an hour away to prevent it from being totally sticky?? Help!!
I like to deliver in insulated boxes with dry ice. The dry ice tends to not cause as much condensation.

Thank you;) I actually closed personal business about 2 years ago so as not to miss out on the time I have left with my kids at home. I do work 3 to 5 days a week at a bakery in Illinois. We are on the Mississippi River. I have a wonderful boss who encourages me to still have my own thing by doing these tutorials. She might be my biggest supporter!

Honestly I am not sure! When you do this on a canvas you would use a heat gun, hair dryer or blow with your mouth and maybe a straw. For something that is consumable I would stick with a heat gun or blow dryer with a.nozzle attachment. The dryer can blow it in a more random way since it is a smaller surface area so a heat gun might be the best alternative.

Mary, have you tried using this technique using edible fabric sheets, instead of rolled out fondant?
I have. A while ago I tried to make my one, but they were heavy and made with Gelatin. That made it hard to work with attaching to fondant. .atbe that has changed by now?
At what point did you remove the acetate that was on the bottom of the fondant when you 1st cut it?
I flipped it over after I removed it from the freezer and put the second peice on the top. Right before you put it on the cake.

I am testing that right now!;) I have had another one with the same technique on my counter for 3 hours now and it is fine. It is about 70 degrees and not humid where I am. I would probably suggest leaving it in the fridge till Maybe 1 to 2 hours before serving. In humid conditions, I tend to leave all cakes in the fridge for no more then 1 hour prior. Humidity makes everything more unpredictable;(

Very similar;) corn syrup has a little more water and is a little sweeter.

If you let it set in the fridge after you attach it, that helps with this. I leave my cakes in the fridge until about an hours before serving or presenting. I testes one of these cakes and it sat on the counter at room temp for 4 hours and was fine. Straight from the fridge. Of course humidity levels do make a difference, so make sure it is in an air-condition space.
