It's my favourite food. Sometimes I like to drink wood apple juice.
It's made this way in early days and even now. It is very beautiful in taste and absolutely perfect to control body heat in summers. It is perfectly hygienic if the maker has washed his hand before making it and should have worn gloves. The so called decent people will feel it unhygienic because they are absolutely disconnected from nature and had lost other dimensions of perception than logic

if you are so connected to unhygenic habits then why not ask that seller on road to prick his nose in front of you and then give you anything you will absolutely love the nose pricking taste and also ask him to scratch his body sweat and then give it to you. People like you when drink and eat unhygienic so why not the sellers will boast and sell unhygenically. Also, why not let the gutter flow open beside your house and smell the gutter in name of connecting to nature.
It's fine if you make it at home this way but vendors should always wear gloves you never know when they wash their hands. I personally haven't even seen soap or hand wash at their stalls. Same with panipuri guys
