I've been following Kevin for years and have never once finished a painting in one session. I deliberately let it dry at certain points because I prefer the crisper colours you get that way. Not once have I "oiled out" before starting a new session. If you follow the fat over lean rule, you don't need to. Fat over lean means use more oil (the "fat") and less drying thinners (the thin") as you add each layer. That is, is that you only use thinners that are also driers, such as odourless mineral spirits in the first layer. Kevin's gel has an alkyd in it so it dries more quickly than if you thinned with just oil to make the paint slick.The gel is good if you are going to finish the painting in one go, with no other layers on top but I don't use it because I don't like alkyd in my lower levels. I'm a layer painter and I find it's hard to paint more layers over an alkyd as the paint can bead up (tiny beads of oil on the surface, with the next layer. It looks like the paint is sweating). I use a 70/30 mix of odourless mineral spirit/linseed oil instead, enough to make the surface slick enough to blend nicely and dry more quickly than thick straight oil paint, but stay slick long enough for me to play with.
The next layers need to have way less drier and more oil with each layer so it dries more slowly. In effect the bottom layer has less oil, ie it's lean and the top layers have progressively more oil, ie they are "fatter". All oiling out does is add the oil to the canvas instead of the paint, so the subsequent layer is oilier (fatter). I find it harder to control though. Instead of oiling out you can use tiny amounts of linseed oil added to your paint, but using more oil with each layer. Some people use a mix of alkyd, such as liquin, and oil mixed together to thin upper layers to slow down the tacking up that happens quite quickly with alkyds, but again you risk the issue of beading up.
Have I had a painting crack? Yes, twice, but I suspect it was from using very cheap, no brand paint from a dollar store that caused it as it was slick, slimey paint which means more oil, but most likely cheap industrial grade linseed oil that has added driers in it. Lesson learned.

One thing i always do before starting on a dry painting is oil in rubbing in ny medium which feeds the dry paint and gives a wet look

I rarely finish a painting in one session, so if I know that I won't have the time, I'll paint in sections. Normally Kevin instructs to paint the underpainting for the whole canvas, but if I know I have time only for the sky I'll only paint the sky and make it complete, and anything that needs to blend nicely with the edges of the sky. But you do need either a clear picture in your head of how you want everything to look like, or to like making it all flow well together as you go. It might not work for all kinds of subjects or working processes, but it's how I'm used to doing it

Hey Kevin what do you mix the acrylic paint with while your painting I have a hard time like painting the clouds seems like it gets to thick and dries to fast doesn’t look smooth I am new to acrylic painting

12:47 Stopped watching at this point when no mention was made of oiling out! This is pretty essential to see the actual colours and tones on dry areas that have gone flat and dull, especially dark areas. The oiling out also makes the new paint glide on slightly better as well.
I don't ever oil out and it's fine. If I want my paint to glide, I add a little oil to the paint so the slick paint is only applied to the bit I'm actually painting. It's way easier to control that way. I often use the dried textured dull areas to dry brush paint across to add a more realistic touch to the texture. It's all a matter of the way you prefer to work. One is not necessarily better than the other.

For the best of both worlds, try gouache.
I just put liquid clear all over the canvas if my paint is dry. Then continue painting. It works for me.
