It is actually limited by the motor itself that spins up to 10,390rpm. The reduction gear is 7.94:1 and a R17 wheel has ~1.95m circumference. Calculating that gives you:
=((10390/7.94)*1.95)*(60/1000) = 153kph
The only thing that you could do would be to fit much bigger wheels or a different axle if it fits.
But efficiencywise I wouldn't recommend that since we can also calculate that 200kph consumes around 80kW which would empty your battery almost immediately.

Is this car modified? I haven't found documentation showing any AZE0 with a 160kph top speed (only AZE1 Leaf +)

No, this is bone stock except for the remote opening device of the carsharing company.

I looked at the specs again and now I am confused aswell. The car is definitely a 2017 and 108hp is stated in the car's title. The only explanation I can come up with, is that the speedometer is off quite a bit. Meaning that the 160 km/h shown could be 144 km/h GPS.
