DO YOU REMEMBER that good old southern cooking?
When I was growing up, my granny was my favorite cook. My mama was also a fantastic cook, but there was just something about being in granny’s kitchen. We all gathered around the table when we went to her house. I have made it easy for you to learn how to cook like my granny and mama did with cooking tutorials for every recipe in our cookbooks. I am a Southern girl born and raised in Collard Valley in Polk County, Georgia. We went to church on Sunday, school during the week, and the grocery store on Friday, and that was our life: no vacations, no camping, just plain old southern country people.

NOW FOR THIS FAMILY RECIPE:
Peanut Butter Pie (Vol. 1 Cookbook)
8 OZ. CREAM CHEESE (ROOM TEMPERATURE)
1/2 CUP PEANUT BUTTER
1/2 CUP SUGAR
2 TSP. VANILLA FLAVORING
OR 1 TSP. VANILLA EXTRACT
16 OZ. CONTAINER COOL WHIP TOPPING
CHOCOLATE READY MADE PIE CRUST (OREO)
Use a stand mixer. Combine cream cheese and peanut butter and beat well. Add sugar and vanilla and beat well. Turn off mixer and scrape sides and bottom of bowl. Turn on mixer and add 1/2 of cool whip topping. Blend on high speed for 1 minute. Add filling to chocolate pie shell. Top with remaining whipped topping. OPTIONAL: You can decorate the top of your pie with many different things like: Pipped hot fudge Mini-chocolate chips Chocolate curls Crushed chocolate graham crackers…etc...

Yum!!! In KY we have Lighthouse Peanut Butter Pie (after a restaurant) and it uses powdered sugar in place of granulated sugar. 8 oz. room temp cream cheese, 1 c. peanut butter, 12 oz cool whip, 1 1/4 c powdered sugar. Blend and spoon in graham cracker or chocolate cookie crust. Chill three hours. It is a family favorite.

I make mine with graham cracker crumbs, cocoa, sugar and melted butter. I bake for 5 mins @ 400° . Or if I'm in a hurry I throw it in the freezer to set the butter. It tastes great and very chocolatey.

Tammy, might I suggest you use a disposable foil pie pan and also pop your pie in the freezer for a while so it sets up quicker and harder. When cutting the first piece, use a scissors to cut the edge of the disposable foil pie plate down to the bottom so that your first piece is as perfect as all the rest. A little trick I learned from Paula Deen. Her instructions for boiling potatoes is another trick. I use them both all the time. I use the aluminum foil pie plate trick for pies that are difficult to cut or when I’m bringing a pie to someone else’s house for dinner. Also, I often will make my cream pies in a springform pan for perfect slices every time. You have to adjust your cream filling recipe a bit to be sure it’s stiff, similar to a cheesecake.
I recently bought Oreos, one of the new flavors, it was gross, so I scraped all the filling out, ground up the Oreos and put them in the freezer to make a pie crust. You can’t even buy the chocolate wafer cookies Nabisco used to make, stopped making those also. I put some of the mini peanut butter cups, and mini chocolate chips to jazz up the top, along with the cool whip. Cutting that first piece is always the hardest, yummy yum is right.

Here's something I do, make a dark chocolate cake bakery style, when hot out of the oven spread hot fudge over the top, let cool and spread the peanut butter pie filling over the top, top with cool whip, chocolate syrup and cut up reeses cups. It's so yummy.

I have made this with Nutter butter cookies. then I make Chocolate ganache after it bakes I pour it on the bottom reserve half a cup of the ganache for the top and I make my own whip cream for the mix and the top my husbands favorite pie...

I live in Australia and we don't have cool whip here so I always make my own. Heavy whipping cream, powdered sugar and vanilla. You can find tge recipe for homemade coll whip on google or pictures 😊
