Hand made simit are the best. Thank you for sharing the process of making them. I have so much respect for all the effort that goes into growing the flour, the butter, sesame seeds, molasses, etc. keep up the wonderful work!!!
They call this gjevrek , it’s truly delicious. Simit I remember is sort of like a dense pita bread that they make with fermented bean water and has a distinct smell of fungus that some people find offensive. To me it would be last meal on earth with a good feta cheese , it’s the best bread I ever tasted . Stuff you find in Istanbul is mind boggling.
Gevrek is the name the people from izmir call it.. it is a little bit thicker than the traditional simit like in istanbul.. simit is crispier and thinner also twisted
I'd like to see a list of ingredients, I've watched simit being made in Istanbul and these are no way the same apart from the shape, I rember seeing the simit being dipped in Pekmez before being rolled into the sesame seeds. I appreciate that there may be different methods for the product, but I don't think that these are the real traditional Simit.
