    Hey MD! (How's the Mrs.💕?) As an FYI, you can put the eggplant on parchment paper to roast, thereby removing the oil option drizzled on them, for those oil free.👌 It would be great to see you make Bindi (Bhindi?) Masala!!!🍅🌶Also, i learned if you buy organic ginger, you can use the skin on it when chopping it up.👊Also, when i make Indian dishes, i put ALL of my spices together, even the Garam Masala and Turmeric in the beginning with the oil (or water) and onions to let all the flavor out!

      @@drcade4988 What I did with good results was this:
      I took 1 cup of rice and created a "tower" and then put the curry on it like a "sauce", had no complaints!

      Its a side dish..
      U can eat it with rice or chapati / tortilla

    For those who aren't a fan of coconut milk in this curry just toss in more tomatoes and it's still delicious :-)

    Ok absolutely rubbish, 2 tablespoons of Garam masala in a curry - all you would taste is just the masala. Coconut milk is usually used in South Indian dishes so this is completely mishmash from 2 different regions. Add turmeric in oil so it gets cooked properly. And this dish is called bharta from North of India. It is not eggplant , it’s aubergine.
