  • Hi Tomodachis!
    Today we are trying our hand at more Malaysian cooking! After watching the Uncle Roger video "Uncle Roger ROASTED BY CELEBRITY CHEF (ft. Chef Wan)" By mrnigelng and a video of Chef Wan making Nyonya Laksa with Anna Olson, we decided were are going to try cooking a Malaysian food staple - an authentic Nyonya Laksa recipe on our home cooking podcast ! This recipe has a fragrant paste of lemongrass, galangal, chilies and shallots blended together with a soup base of coconut milk and laksa leaves served with clams, shrimp and fish balls, which is a wonderful combination indeed! Definitely flavors to awaken the inner foodie!
    This popular dish in Malaysia has so many variations in the laksa soup recipe, and we are excited to try out even more in the future.
    From BBC Foods to Jamie Oliver, Nat's what I reckon, Kays cooking and Gordon Ramsay - and most recently Kent Rollins' Egg Fried Rice, we always love exploring the foods of the world! Tune in for another Taiwanese and Japanese reaction!

    The lime not just for deco. Press the juice into the laksa soup. It will elevate the flavour even more it will make your eyes pops open. Hats off to you for making this nyonya laksa.

    I've been wanting to make my own laksa nyonya for years now but haven't done so because it's quite tedious to make it, and for you guys to nail it the first time around, I'm impressed. Kudos for giving our cuisine justice.

    You will feel like a king especially when you eat laksa in the morning. The best laksa in the world must be full of umami flavor with the richness of the coconut cream and last but not least, flavors and herbs in the end of your taste buds from all those fresh ingredients blended together

    The shrimp paste in Chef Wan’s video is actually not shrimp but krill. It is usually dried under the sun and turns into golden-like colour and taste quite salty and fishy.
    It has a distinctive flavour which compliments the overall creamy taste by the coconut milk, spiciness from chillies, and aromatic from the spices. And additional sweet & sour flavour from the calamansi/lime.

      We think we used the correct kind of krill to make our paste in (1:37) They are quite small and dry with a salty and fishy flavor. We soaked them in some hot water so their color became a bit washed out but they added an incredible flavor to the dish! The lime was also such a wonderful balance to the dish as a whole!

      Yup I think that’s the right one. Just want to make sure u guys get the authentic taste as the original version. Really enjoy & appreciate your efforts to recreate our local delicacies. Let’s pray for this pandemic to end and we would welcome you guys to Malaysia to enjoy our country especially foods.
      Btw, there are several versions of laksa depending on the regions/states and this version is usually pretty uncommon in Malaysia tho 😅

    You guys can also try to cook nasi lemak for breakfast. Its very common here in Malaysia, and even stalls sells this. U can choose the side dish to make it more variety but a simple one will only consists of sambal, (chillies), anchovies, cucumber and egg. Give it a try

    I discover your channel and Chef Wan's existence thanks to Uncle Roger and I'm obsess with his recipes and you making them. Usually people that aren't asian in any way, we feel really intimidated when facing the posibility to try and make an asian dish (yes, I know, so weak, so weak, where's my courage 🤣?), but I love asian cooking and the flavors that came with it, so watching you recreate the recipes give me the push that I need to get the ingredients (I live near the Andes in Argentina) and to try as you did 😁 Thanks for sharing this very instructive videos!

    Wahh you guys really do a good job at researching and finding all the ingredients.. I know it is hard to find those ingredients there but you still manage to find them 👍🏽 most of our dish have complex flavour profiles because it uses many ingredients.. And because we are multicultural, every dish have the mix of ingredients from each culture(indian/malay/chinese)..

    you two should open up an restaurant or small cafe I think.....
    With the international food Menu all around the world. U have Chicken Chop, Ramen, Nyonya Laksa, Fried Rice, Thai Green Carry, Tomyam gong, Char Siew Pow, Dumpling and so on...it might be Awesome I thinks.

    I'm so happy to see both eating laksa. You guys are the very few people in Japan that can cook laksa! In Malaysia we have 4-5 different types of laksa. One of the popular one comes from the state of Sarawak ( my place ). Hope you can try to make Sarawak laksa in future.

    Omg you managed to get Laksa leave in Japan? Btw you can also includes other seafoods into that gravy such as scallops or taraba crab to make it expensive and different in future. It will increase umami in the soup. I live in Qatar, the only ingredient that i cant find here is dried tofu hmmm I feel like cooking nyonya laksa too...im drooling now ...

      Yea! We were surprised to find it too! Taraba crab laksa sounds like it would be so good lol! For the dried tofu, you can:
      1.freeze some firm tofu, let it melt and drain the liquid
      2.freeze a second time let it melt and drain the liquid.
      3.dry off the tofu which should be spongy now.
      4. Cut into cubes and fry until golden.
      Hopefully it will be a close enough substitute!

    Well done. Now you are more malaysia than me 👍. Btw hi from Malaysia and I think this Friday I will also try cook this laksa nyonya recipe 🤗. Try cook ' chicken rendang ' next and I think chef wan make a video how to cook chicken rendang. In Malaysia, chicken rendang is malay dish that we always eat when we celebrate Hari Raya but all malaysian wether they are malay, indian, chinese they love it. ☺️

    I never knew we have a lot of ingredients...looks like out common in house ingredients and we never prep...we just cut and cook along the way so i never actually see how much everything actually is...but after every cook is very tiring for sure 😅

      Yes, many of these ingredients are quite difficult to get a hold of in Japan, so it is not very common for us, but we wanted to do our best when making something as iconic as Laksa! It really takes a lot of preparation doesn't it?

    There’s instant ramen version of this laksa. Its called MAMEE CHEF curry laksa. i would say the broth is quite similar with addition of coconut,dried shrimp and the rempah used. Its more of the premium ramen tier.

      I think mamee chef curry laksa has modified their original recipe.taste not similar as in early days..i tried other brand white curry laksa...and yes there's smell of dried shrimps that enhance the taste..

    I actually recommend thick udon noodles as a suitable substitute for actual laksa noodles. There's a hawker stall I went to that sells "Laksudon". Laksa with udon noodles.

      @@TomodachiTable Actually, since you can find rice vermicelli, you should try finding a recipe for "soto ayam". It's a chicken stock-based broth eaten with different types of noodles and also a fried potato patty called a "begedel".

    Are you guys in Japan. I am surprised that you can find candle nuts. I tried to find it around Bangkok. Almost impossible. I had to buy it through shopee 😂

      Yup, we are in Japan. But we are lucky to have lots of international markets here! We found the candle nuts at an Indonesian grocer here! Can’t believe that we found it easier here than Bangkok!

    N yes, there is so many types of laksa in Malaysia depending on the state. My favorite will be Laksa Johor and Laksa Sarawak.

    I hope your neighbours wont complaints, because whenever my neighbours cooks dishes that requires long stir fry like rendang or any herbs like lemongrass and sambal involved i can smell inside my house (as Malaysian we understand) but make me hungry because it smells tempting. We always say if the neighbours can smell my cooking i need to share and give them some😆😆

      14 basic type but multiple variation of each type depends on province you're in.... Each province normally have a very tiny change on the basic recipe as identity.... But not all.....

    Wow, you manage to get all the ingredients. Did you get it from Veno? When I was staying and working at Tokyo for four years in 1999-2004, Veno market was the place to get all that. And for the laksa, you can use udon too if you cannot find the real laksa. Yes, if the soup is good, then your laksa is oishiik. Ita daki masu!!!

      Ueno is definitely a good place to get these ingredients - especially the underground shopping market! However, this time we bought everything from Okubo and Shin Okubo near to Shinjuku!

      yes, i know Shin Okubo and Okubo. I worked at NHK and used to stay at Shibuya-ku for two years and in Itabashi- ku after two years to experience travelling by trian to work. Love staying in Tokyo. Great experience. I am now back to Malaysia.

      I have my fav Japanese restaurant not Malaysian in Shibuya. But I forgot the name. I love sushi, udon and tempura. I remember one Indian resraurant that we used to go. The nun was oishik.
