    - 1 small onion, finely chopped
    - 1/2 cup apple cider vinegar
    - 1/4 cup water
    - 3 tablespoons sugar
    - 1 tablespoon Dijon mustard
    - Salt and pepper to taste
    - 1/4 cup fresh parsley, chopped (optional)

      We add kielbasa to this potato salad and serve with fried or barbecue chicken. Never made a roux, and also added celery seed.

      My mother makes hers a bit different but one can say it's the same end result. Being a South African German I've grown up with a lot of South African German dishes brought over from Germany and altered a bit but regardless when it's served warm it's the best. My mother always serves her German Kartoffelsalat warm.

    I grew up with this dish. It is one of my very favorites. The father was first gen polish and German immigrants. Fathers parents had 12 children, half each of boys and girls and they all made this dish for their families. Holidays were filled with awesome European old world foods, passed down thru generations. Another of my favorites is pork steak baked in sauerkraut with potato dumplings the size of golf balls. I haven’t been able to find the dumpling recipe exactly but remember these were firm in the middle not all soft like american dumplings. Luckily I have reconstructed them from memory and taste.     Being a German I love warm potato salad. Thanks for making it to introduce it to some of your viewers that may have never had it. You’ve woke me up to making it again. For those who don’t like parsley use chives which I use quite often for color. I get dehydrated ones and they work fine Another great German foods is Bierocks a German cabbage, onion and ground beef roll I make them all the time, my mother made them frequently when I was growing up. They are so good warm out of the oven and brushed with butter. Cheers mate

      Horrendous bacon??!!! The best bacon is fatty bacon cooked until crisp and the fat renders out. As for anyone muttering about arteries-it’s all about lifestyle and quantity. Being born in the 50’s, the concept of low-fat wasn’t even considered. I don’t remember anyone being fat or having issues.

    every time I see your knife work I am reminded that my knives must be sharpened before using today.
    And I always save my rendered bacon fat for use in cooking, usually I use when cooking lean pork loin or chops. Olive oil is quite expensive in rural British Columbia Canada so I treat it like liquid gold.

      Saved bacon grease is great when preparing breakfast. I use it to grease my pan when cooking up pancakes or French toast.Adds good flavor to the food.

    My tastebuds were having happy flashbacks while you were eating.
    The only minuscule difference between your recipe and mine is I add a couple of squirts of Maggi to the sauce and in the summer I use fresh chopped green onion.
    Now accompany that salad with a piece of Kassler (smoked pork chop) and a Pilsner, you are in Bavarian Heaven.
    Parsley freshens the breath and it has the added natural health benefit of stabilizing heart rhythms. When your heart flutters in anticipation of eating a delicious meal, a little parsley might be handy.

    I know some people might find German potato salad a little strange (particularly my fellow Americans who are used to mayo type potato salad) but German potato salad just hits all the right notes....it's not as "heavy" as regular potato salad and the vinegar kinda "cuts" the fattiness of the bacon. But it's still hearty and filling. I will try your recipe!

      Hello, Henrietta. I hope you had a great birthday! First, wrap the cheese in cheese paper or wax paper. These materials allow the cheese to breathe while maintaining the proper moisture level. After wrapping it in cheese or wax paper, you can loosely cover it with plastic wrap to add an extra layer of protection without completely sealing it off. Keep the cheese on the middle shelf, where the temperature is more consistent.
      Keep the cheese away from the refrigerator door as the temperature fluctuates. I have my cheeses on the middle shelf towards the back of the refrigerator. I will say I only wrap in plastic wrap. Thank you. Best, Rik

      I just literally yesterday.Got a hot potato salad recipe from oma girhild fulson . I've never seen it her way before and I'm German and make hot potato salad once in a while...
      Hers was sliced onion sauté in pot with butter add only 1cup broth and sliced potato into boiling broth . Meanwhile 3 egg yolks cubed pickle and radishes splash of pickle juice lemon juice sugar if using sour pickle salt and pepper. Add into the hot potato pot after taking off heat and sprinkle with chives...
      Sounds great too

    My mom came from the south of Germany and she used Chives, no Parsley and no bacon. She did cut the onions and made hot water in the kettle, and the onions had about 5 minutes to „cook“, made it easier to digest. Vinegar, oil and chicken broth and salt and pepper.. that’s her recipe and I still make it! So delicious 😋

    I'm from the SW part of Germany and we don't make it hot! It's served at room temperature and not hot nor ice cold. The bacon is diced and rendered completely out and the onions are sauteed until soft and lovely. Boil whole unpeeled potatoes, when tender peel while still warm. Salt & Pepper to taste. We use Hengstenberg Altmeister Vinegar for a nice bold flavor! Mustard has never been added, I seriously dislike Dijon anyway. I top it off with curly Parsley not flat. I've never made a rue, make a hot vinegar sauce, use Red Potatoes or serve my salad hot. This is how it's been made in my family for generations. I'm sure your recipe is lovely Rick but I've never seen it made your way and I'm 62! 😉

    I watched this video last night, made this dish today, LOVED IT !!! My sons do not like potato salad because of mayo/ salad dressing... This they absolutely loved as well as I. Both boys cook and said their both going to look up your channel.. Thank You for all your recipes. I try as many as I can, and so far haven't found one that wasn't great.

      Yes here in Austria we do it with cooked sliced potatoes, vinegar and seed oil, salt, pepper, sugar, little bit of mustard, onions. Greetings from western Austria!

    I'm of German descent and fondly remember the church socials when the old frau's would bring hot German potato salad. I have tried for years to replicate this menu in my own cooking - always NOT ever getting the desired result. Tried your recipe last night and it was FANTASTIC!!! Just like I remembered. THANX!!!!! It is the roux that does it.
    P.S. My German aunt (whose recipe I have used unsuccessfully) would be appalled that it took a 'Brit' to teach me how to cook a good old Germain dish. ;- ;> Keep up good work.
    P.P.S. I am also half Welsh - have you done a video on making Welsh Cakes?

    I made this yesterday evening. I was in a bit of a rush and was distracted, but I really wanted to try your recipe.
    It turned out perfectly!
    The potatoes were PERFECTLY cooked! I usually overcook them.
    The sauce flavor was absolutely delicious. The blend of sweet and sour was just how I like it.
    And I ate too much!

    This is almost like I make it. I don't use flour or sugar or apple cider. White vinegar and lemon juice is what i use. But I will definitely try your version. BTW Rik, my husband loved your Rumbledethumps recipe. He gave it 2 thumbs up.

    Thank you. The few times I tried this it never quite worked. Adding the flour and mustard was the key I needed. And unlike many Americans I've come to really appreciate FRESH parsley. The head cook in our elementary school used to make parslied potatoes very simply, and they were the BEST.

    My Mom made her German potato salad with bacon and used the bacon grease. My husband’s Mom made it without bacon. Oil and vinegar, a little sugar, and parsley. I love it both ways, but with bacon the best.. I’ll try your recipe next time. Looks delicious!

    One of my favorites, but as always you always do just a wee bit different than I and it’s always a pleasing difference. 🙂 I have never added ( nor have I ever heard to), mustard.
    Yum! Add to that the fact that you somehow make every thing you cook just so quick and easy. I have always reserved hot German potato salad for just a couple times a year because it seems more difficult. I can’t tell you why I have thought that for the last 40+ years , but I have.
    You have such a knack and way about your methods that is just joyful.

    I got 10 seconds in and thought that it looked awesome and was so confident that it would be👍👍👍that i just had to hit like! RIK please keep doing these type of recipies, they are what normal people need, not prawns or other expensive seafood etc and crazy recipies!     As a German I have to say: never had that with unpeeled potatoes. Plus: the potatoes have to be cold before cutting,makes them sturdy and not breaking. Warmed up in the pan with the sauce and eaten not hot, just warm.

      Hab auch noch nieee von dieser Art Kartoffelsalat gehört. Klingt eher nach warmer Hauptspeise als Salat! Ich koche .. immer noch..sehr gerne, gerne auch Hausmannskost (eine Oma war Wienerin), kenne auch die deutsche KĂŒche. Lg A.

    I make this a couple times a year for cookouts, my family and extended family loves it. I learned to make it from my mom. I am so glad to see this, everyone should know how to make it. Celery seeds is what I add to the gravy.
