Grapefruit Marmalade - The Best Marmalade Ever!

  • Grapefruit marmalade is sweet, yet still has this delicious and famous grapefruit bitterness. I make the easy version and my marmalade also have less sugar.
    You can use this process to make marmalade from any citrus fruit or you can combine a few of them!
    Here are the instructions for this grapefruit marmalade:
    INGREDIENTS:
    7 grapefruits
    1 lemon
    2.3 lb sugar
    2 teaspoons of vanilla extract
    **If you'd like, you can add a cinnamon stick or some clove...
    DIRECTIONS:
    1. Use a vegetable peeler to peel the orange part of the grapefruit peel. Do the same with the lemon.
    2. Dice the peel and add it to a pot. Cover with water and bring to a boil. Boil the peel until soft about 20 minutes.
    3. While the peel is cooking, work on removing the pulp from the pith. Add the pulp to a bowl and discard the pith (I give it to the goats). Do the same with the lemon.
    4. Once the peel is soft, drain the water and add the peel to the bowl with the pulp. Weigh this bowl and write down the weight then add the fruit to a wide and shallow pan.
    5. Place the bowl back on the scale and add half of the weight of the fruit in sugar. For me, the fruit weighed about 4.9 lb so I added about 2.3 lb of sugar. Add the sugar to the pot with the fruit.
    6. Turn the heat to medium-high and bring the mixture to a boil while stirring frequently. Let boil about 7 minutes.
    7. Lower the heat to medium (or a little below that), and cook while stirring frequently for about an hour and twenty minutes or until the marmalade reached your desired consistency.
    8. Remove from the heat and add the vanilla. Stir it in well.
    9. If you want to can this marmalade, heat water in the water bath canner, sanitize your jars and lids and bands, pack your jars, and process half a pint and pint-size jars for 10 minutes.

    I copied the recipe and the consistency was perfect, but the marmalade is incredibly bitter. I added more sugar than suggested as well. Overall though I’m very happy I tried this recipe! It was a fun experience.

      I'm glad you liked it. It is a base for basically any citrus marmalade. Remember that the fruit itself very in taste... Sometimes it's bitter than other times. It's just nature and we have to adjust accordingly. Thanks for watching!

    This looks amazing, you make it look so easy. I want to make this but I don't have the mason jars. Can I just make it and place it in old regular glass jars of mustard and other miscellaneous glass jars?

      Yes you can. There is an old trick to seal them... you wash the jars well with hot water, fill them with the hot jam when it’s ready, clean the rim, close the jars, and turn them upside down so they are standing on their lids. Leave them like that on the counter for a few hours or overnight to cool. Once they are cool flip them over and they should seal. If they don’t seal, you’ll have to keep them in the fridge.

      Lady Lee's Home whoa, that's so smart! I would love to try that, although I think this wouldn't really last around my house for too long anyway. Grapefruit jam sounds so unusual, can't wait to try it! I made a rich grapefruit ice cream but I feel like the grapefruit flavor is somewhat indistinguishable. This jam swirled in at the end will fix that problem, thanks so much!

    can I make this marmalade with 7 oranges and 1 lemon. Also I have mandarins how many of them do I need to make the marmalade please

      You can but the measurements will change. Weight your fruit and use half of its weight in sugar. That should work. You can do this with any kind of citrus fruit.

    How did you sanitize the funnel? Even if it was sanitized, you keep putting the funnel on the dirty cutting board. How is that safe?
    What about the paper towel you are using to wipe the rim -- no way that is sanitized.

      Non if it has to be sanitized. You process it in a hot bath of water, that kills all the bacteria.

    I have just cut up 4 grapefruit 2 oranges and 1 lemon but didn't remove any pulp 😣 so it will be far too bitter 😨😨 is there anything I can do to get to a sweet normal taste. Or should I just throw it all out now before I waste the sugar too ?

      It might not be too bad. Maybe add a little bit more sugar? I wouldn’t throw the fruit.

      This is an American version of the traditional recipe. The original recipe uses only the pith, which is the white part, and which is the most bitter.
      The way we remove the bitterness is to bring the pith and skin to a rolling boil for ten minutes, drain the water, fill the pot again with clean, fresh water, then boil again. We do that another time, and the bitterness is almost completely gone. What remains is pleasantly tart, not bitter. So that is a three times boil with fresh water each time.
