Stream processing and OLAP/OLTP are different parts of a data pipeline. Stream processing systems capture data from sources and send it to data consumers in real-time or in near real-time, while OLAP or OLTP systems are on the consumer side of the pipeline. So you can stream data to OLTP and OLAP systems in real-time.
Also you can send data to OLAP and OLTP consumers in batches based on some schedule.
You would use OLTP design to support short transactional queries found in most applications to update databases and solve operational tasks.
OLAP design targets more complex queries to run data analysis.
