Shouldn't it be more appropriately named "fried" chicken as opposed to "roasted" chicken since it's bathed in hot oil as opposed to roasted in an oven.

Different chefs have different recipes for the chicken cavity. I cook this (pronounced JA JEE GAI) at home. The chicken is fully cooked; juicy on the inside, crispy skin on the outside! Each time you bathe the chicken it gets cooked more. It is delicious!!! Squeeze lemon juice on top of the chicken then sprinkle with a special mixture of salt, it's to die for!
