Ingredients for:
1) Tequila Lime Shrimps:
- Shrimps - 400 Grams
- Salt - ½ Teaspoon
- Black Pepper - ½ Teaspoon
- Paprika - ½ Teaspoon
- Olive Oil - 1 Tablespoon
- Chili Flakes - ½ Teaspoon
- Green Pepper - 1/3 Cup
- Red Pepper - 1/3 Cup
- Spring Onions - 1/3 Cup
- Lemon Zest - 1 Tablespoon
- Coriander - ¼ Cup
- Tequila - 1/3 Cup
- Tomato - 1/3 Cup
- Compound Butter - 1 Tablespoon
2) Compound Butter:
- Butter - 1/2 Cup
- Chipotle Sauce - 1 Teaspoon
- Chili Paste - 1 Teaspoon
- Lime Zest- 1 Teaspoon
- Coriander - 1/8 Cup
- Lime Juice - Juice of ½ Lime
- Salt - to taste
Tequila Lime Shrimps Preparation:
- To prepare the compound butter, mix the butter, chipotle sauce, chili paste, lime zest, coriander, lime juice, and salt in a mixing bowl and refrigerate for 1 hour.
- In a mixing bowl, add the shrimps, salt, black pepper, paprika, chili flakes, and olive oil. Mix well and let marinate for 30 minutes.
- Preheat a pan with olive oil and cook the shrimps for 30 seconds per side.
- Add the green pepper, red pepper, green onion, lemon zest, and green onion. Cook for an additional minute.
- Add the tequila and carefully ignite it until all the alcohol is burned off.
- Add the tomato and the compound butter.
- Let the butter melt, mix well, and serve hot.
