Hi Tracey!! I have recently discovered you on CZcams and I have literally binge watched every single one of your videos from the beginning! Your cakes are so amazing and I love your personality. I am a novice cake decorator but I absolutely love it and have done some for friends and family. I was wondering a couple things- you mix your dusts and paints with water many times instead of vodka I have noticed. I have thought this makes them clump... Are there certain situations where you prefer water over alcohol (or lemon extract)? Also, do you refrigerate your cakes in between each step or do you leave them out? I see you store them in the cupboard. Does the ganache and sugar paste insulate them enough to keep them fresh? Thanks so much for all your tutorials and vlogging! I have become a super fan and you have taught me sooooo much!!!
Hi!! Aww nice to have you on board! Sure! I usually mix my metallic dusts with lemon extract (I find this better than vodka) and mix gel paints with water - I dont find this any different to using vodka...and water is cheaper so thats a no brainer for me haha.
The only dust I usually mix with water is white - again I dont find this any different to vodka as its only usually details I'm painting on rather than an open flat surface. Nope I dont refridegerate mine. I'm in the UK so it's not usually *too* hot, unless we get a freak summer like this year! Putting cakes in the fridge makes the sugarpaste 'sweat' and can often make decorations flop or paint bleed. Again this depends entirely on brand/cake/situation/location, but I personally never do it. Yep the ganache layer and sugarpaste layer competely seal in the moisture so it keeps them fresh :D

@@Cherrycakeco thanks SOOO much for the reply!!! This really does help!!!! I have been mixing my gel coloring with vodka but it IS super expensive and water will be much easier!!!!! It gets super hot though where I live so I have been chilling my cakes and then letting the sweat dry off when I take them out. But it is good to keep in mind now that winter (and my kids birthdays) are coming up! I am going to start ganaching my cakes for a crumb coat and final coat since I see from your tutorials it makes them have such a nice finish and it keeps their shape so much better! The buttercream always squeezes underneath my paste layer at the bottom and I hate that! Oh and I would Love to see the process of how you do your designing and the program you use! Thanks again for all you do!!! 😀😀😀
Yes I think you will love the ganache, it sets to a nice firm base with no squishing buttercream! haha I never went back.

Thank-you! You can airbrush ganache, but the water based colours arent so effective (chocolate and water dont mix as its like its waterproof!) So you'll need to get a powder based airbrush colour x

Gorgeous! In stead of the pme black lustre spray, can you also use the airbrush again?
The reason I used the spray instead of the airbrush is that the spray is powder based (lustre) which covers the chocolate and ganche drips. My regular airbrush colour is water based. Water and chocolate dont mix! It's almost waterproof and will run off, so you'll need a powder based airbrush colour x

This is beautiful!!! I have a question about the airbrush. Do you allow your cake to go through the condensation stage( if you ice your cake frozen) before you airbrush?
Thank you!! I dont put any of mine in the fridge or freezer (The UK doesn't get too hot - just on random freak days! lol) But yes I would let the cake fully dry out before airbrushing x

My eldest doesn’t like chocolate - anything ! How can you make different flavour ganache?
I'd use buttercream instead :D Ganache only has 2 ingredients - chocolate and cream so it can't be made with anything else. x
Would you say vanilla sponge or chocolate sponge would be best for this kind of cake?

Can you regular airbrush the sequins?
You can if you have an ethanol based airbrush colour, as that will cover chocolate and other items. I use a water based airbrush colour which wouldn't work on the skull so I prefer to use the shimmery PME spray. x

Hi your videos are great since finding you I've gone square eyed watching you I've just watched your video on ganache and the pro froster that will be my next purchase but just one question please what buttercream do you use every time I make a straight forward buttercream with unsalted butter room temp icing sugar and a little milk no matter how much I sift the sugar or how long I mix it for it always has a grainy texture what am I doing wrong because to get round this I keep making swiss meringue please help, by the way I'm watching from Ireland
Thank-you! I put my 2 parts icing sugar and one part butter in first and beat....only then do I put my splash of milk in, otherwise the milk creates lumps in the icing sugar. I then beat it on high for quite a while until it pales in colour. If that doesnt work try a different brand of icing sugar as I've had grainier ones in the past. Hope it helps! x
