Naan tricks/How Indians make naan:
Knead by hand, it tastes better.
For the dough I'm not sure how it was done here (wasn't shown) but I like to do hot water (not boiling or anything but warm) with yogurt and oil (olive oil tastes good in there but I have seen it done with avocado sometimes) and that whole wet bowl is whisked a bit then you take some flour, salt, sugar and active or instant yeast and mix that in a dry bowl, last you take both bowls and mix then together and then you start the kneading, you end when you get a nice big ball of dough that you pour some extra oil over generously at which point you cover the bowl with the dough with some plastic wrap so that it is tight and that way it gets fluffy and rises over the course of an hour (for instant) or a couple hours (2-3 for active yeast.)
The first one was the right thickness.
To get the right naan shape just take the dough and make a bunch of spheres of dough (I just take all the dough and put some dry flour on my hands and clean dry countertop so that nothing sticks, then I break a handful of dough and cup both my hands around the dough and press, then I smooth it out by gently holding the dough between my two hands with my hands being flat and then rotating the hand on top of the dough clockwise while I rotate the hand under the dough counter clockwise once you start you just move your hands from top and bottom to right and left because it is easier to move your hands that way, then you can put those balls of dough on cover them in a bit of dry four so they don't stick and just rolls them out into nice ovals).
Also small bubbles (air pockets) are good because they make it crunchy, pop them after it gets cooked well if you want it to cool faster but leave them if you want to keep it hot.
I also like to press the oval dough in from the very middle with my hand just a tiny bit some that the edges rise a bit more than the middle creating a really shallow bowl like shape that you can either pour a sauce or "curry" (British term, Indians have a name for each dish, Kurhi is the only dish actually called curry or at least it is pronounced like it and it is actually a thick creamy yogurt based soup with vegetable fritters in it, so nothing like what westerners call curry) in it or you can break pieces from the sides and pinch the backs of them and they turn into little scoops to eat liquid dishes with.
I use a tandoor to cook naan but with a iron skillet it just needs to be really hot and completely dry, then you just wait for some medium sized bubbles to form and the side being cooked to get golden brown (it doesn't really matter if it gets dark brown as long as the other parts are light brown because that happens with naan and it only adds to the flavor) then just flip and repeat.
For garlic naan it is really easy, just put crushed and minced garlic into your oval dough pressed in nicely throughout the dough (not the edges but more so the middle).
I like to take my hot naans and put a layer of ghee on them but butter or olive oil works as well.
You can also take the challenge and grill naan instead of cooking them on a skillet and get a bit more of the tandoori taste but you have to tend to them while in the grill and can't just leave them there the way nick does with anything in the grill (getting a good naan with air pockets is harder on a grill and most people just buy a tandoor if they want that taste in their food).
You know you have made a good dough when it is stretchy and fluffy at the same time while still being a bit heavy like pizza dough.
For flour All purpose is fine but bread flour is also really good when done right, you can really use most flours that are used for this type of dough making and it depends on taste but those are the big two.

@@HiroTwoThousand Because naan is delicious and it fits a wide array of dishes. It can even be eaten with non-Indian soups given they have matching flavour profiles and the right thicker creamy texture you need with naan. You can even cut cooked/roasted naan into triangles after it is complete and then eat crispy hot naan with dips and it is delicious and a lot more fulfilling than eating something lighter like chips with dips.

In my opinion pan searing is optimal, but much much harder to do well then grilling.

Im a cook by profession, never had a steak smell like fish. They get a different smell, and slightly greenish/grayish and/or pasty appearance when theyve gone bad

@@dezmacht1 Hand kneaded, more yogurt, Hand rolled into balls before you roll it into an oval, cooked in a tandoor, ghee on top right after you finish cooking them. Garlic is pressed into the dough when you have them rolled out into ovals right before you drop them into the tandoor (or on the dry iron skillet with really high heat if you don't have a tandoor.) Dough allowed to rise for over an hour in a plastic wrapped bowl. I put a impromptu recipe in the next paragraph, it isn't perfect but I'm working off memory.

@Buddha Oh I defrosted it in the fridge and when I cooked it. It didn't smell bad rotting or really have a taste to it other than maybe freezer burn. But maybe 2hrs later it felt like someone was stabbing my stomach with an ice pick and well it's gonna sound weird but here's this mental image the waterworks started. That's the second time I had salmonella the first time was from a restaurant.
@Buddha it's like 11 u can't do anything but lay down and run to the bathroom to make a fateful choice. And to be exact I had it 3 times but that 1st ever one to happen I was like 9 so I didn't realize it. I say 11 because there's nothing for it the doctors I went to give you anti nausea pills and I believe Tylenol but if u can't hold anything down it doesn't help. It's something your body has to fight off you only go to the back if your dehydrated. Advice to if you ever get it have a bucket by the toilet.
Yeah I can totally relate to this story. I once got some Arby's down in Arizona and I ordered a Chicken bacon and Swiss and the person in back asked whats on a chicken bacon Swiss and it must've been their first day of work ever in their life and they clearly undercooked or contaminated the chicken and I was bedridden for 2 weeks and maybe got 2-3 hours of sleep every night if I was lucky and only could eat probioatic yogurt and soup. Worst experience of my life 11/10 easily. Would've rather died pretty much then go through that stomach/lower back agony! I would try to find any position possible to try to make it feel better but nothing helped and doctors thought I had kidney stones lol. I was planning on going to Cacun in like 2-3 weeks and just barely recovered before leaving on vacation haha
@Buddha It is scary but now I usually buy fresh meat everyday and cook it between 1-2 days and meat thermometer is pretty good to have. Just smell it if it smells off don't eat it the money wasted on it being thrown out when's it's off is way better than the experience + the cash for drs cuz you'll need them nausea tablets.

They missing some of the plot here
even though beef is hated alot by the politicians and most of the country, there is one state where eating beef is not prohibited, so it has become a major part in that state's food culture
And?
There are actually quite a few Traditional Indian recipes with Beef as it's consumed by the Christian, Muslim and the (small) Jewish population within the country. Beef is also not banned everywhere as in certain states you can legally purchase it for consumption and or serve different cuts and dishes with Beef if you have a food business.
@@bradleys8649 As someone who visited India I can definitely back this up as Beef is definitely available in smaller shops and in places like Rajasthan, Bombay and Goa but not in supermarkets in the meat section (as far as I know).
