    Discard Crackers:
    1 cup starter
    1 cup flour
    4 T Butter
    Seasonings of choice
    Mix until a dough is formed and sit in fridge 4-24 hours.
    Bake at 350 for 15-20 min. Watch closely do they don’t burn

    Sourdough Peach Skillet:
    Fruit filling of choice- I used peaches
    ¼ cup cream or milk
    1 T Flour
    1 tsp cinnamon
    1 tsp salt
    Skillet Tipping
    1 cup or more discard
    1 t baking powder
    1 t baking soda
    ¼ cup coconut oil
    3-4 T Butter
    1 egg
    Bake at 350 until browned on top, around 25-30 min

    Sourdough crepes:
    6 eggs (or more)
    1 cup sourdough discard
    3 T Butter or cocnut oil
    1 tsp salt
    ¼-1/2 cup milk
    ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~
    Sourdough Dutch Baby:
    6-8 Eggs
    1-2 cups discard
    1/3 cup milk
    1 t salt
    1 t vanilla
    2 T maple syrup
    6 T Butter - melted in cast iron skillet
    Bake at 350 for 15-20 min or until puffed up

    Sourdough Chocolate Chip Cookies:

    8 T Butter (113 g)
    1/2 cup brown sugar (100 g)
    1/2 cup pure cane sugar (100g)
    1 cup chocolate chips
    3/4 cup all purpose flour (95g)
    1 cup + 1 t bread flour (125 g)
    1 t baking soda
    1 t baking powder
    1 t salt
    1 egg
    1/2 cup starter discard (125g)
    1 t vanilla
    Bake at 375 for 12-14 min

    Just made your sourdough crackers they came out so good! Iv made them before with just discard and butter and they were not my favorite so adding that extra flour taste great and it rises beautifully. Thank you! Trying your biscuits next!
    And for your biscuit recipe do you start with unfed starter/ discard? Or fed?

      Im so glad to hear! Yes the discard/butter crackers are good but just not a thick and "crackery" to use! The flour and ferment time version is our favorite! So glad you loved them!
      And I've used both active starter and cold discard with the biscuits! They are fine either way bc you're adding the baking soda/powder to give them a rise before baking them.

    My sister is law gave me discard and got my starter started on Monday night and fed her. I left her on the counter until Tuesday mid day when I put her in the fridge. When do I NEED to feed her again? I want to use the discard for recipes, but not sure if it is ready now and then I can feed her again.
    Any help is greatly appreciated!

      Hi Tracy! If she’s been in the fridge I try not to go past a week before feeding/using mine! (Usually I only leave at max a day or 2 bc I use mine so often)
      But if it’s in there week it will need at least at day or two to bounce back after referring it since the cold will make it go somewhat dormant!
      You can use it for discard immediately ha. Just pull out of fridge and make something! Cold and all!
      I just woundnt leave her in there for more than a week-ish without a good feeding. I’ve leave mine longer but the longer it’s dormant the longer it will take to bounce back for when you want to make recipes that need a good rise!

    I have been trying to get a sourdough starter started for the past 3 weeks. Nothing is working. I have done 1-1 ratio and also weighing it 100g-100g. Im not sure what's going wrong. My house it set at 70* F almost all the time.

      Oh no! It can be tricky to get it started up initially! Are you not getting ANY bubbles at all? Even tiny tiny ones at the bottom?
      I think when I started I used 1/2 cup flour to 1/2 cup water, but it’s been a while. But I believe I did 1-1 ratio as well back then.
      Are you using filtered water? Also I can take up to 14 days to even get a tiny few bubbles. I know you said its been 3 weeks though! It can definitely be frustrating at first, I remember!
      You can also try letting it sit in your oven with the light on to add some warmth. I find mine does better in very warm temps. Like 80-85+. I have a much more bubbly starter in the summer than winter!

      Put it in your fridge after the first week and only feed it weekly

    I'm new to starter. I made mine only about a month ago. It is to liquidity. How do you get your starter so thick? I tried to make bread and couldn't pick up the dough. I had to scoop it in, and you can just imagine what a mess the bread was. I'm about to give up.

      Please don’t give up!!
      From the sounds of it, it just needs a stronger feeding. Mine has gone through liquid phases too. It just needs a boost!
      Pull 30g and add to a new jar and add 120g water and 140g flour (bread flour if you have it, or AP Is fine too)
      That feeding should help it bulk up for bread baking! You may need to do that 2-3x but it’s not a lost cause! Don’t give up!!
      Once you get it, it is so worth it!

    Why do you HAVE to discard?

      Discarding is just the term used to take away extra starter so that you aren’t feeding SO much at one time. It will take much more flour and water to feed a larger starter. Technically you don’t have to ever take out any discard but your jar needed to hold it would just need to get bigger and bigger to hold it all!
      I never actually toss mine, I use it in recipes (such as these) that don’t need an active bubbly starter to help the product rise!
