Hearty Beef Stew In The Oven

This delicious Beef Stew is cooked mostly in the oven to keep it from scorching. I borrowed this recipe from Americas Test Kitchen. A load of beef with carrots potatoes peas corn and green beans. Some of the best beef stew that I have made yet. So sit back relax and enjoy. Ingredients below.

3lb beef cut into cubes
1 1/2 tsp salt
1 tsp black pepper
3 tbls vegetable oil
2 medium onions chopped about 2 cups
3 or 4 cloves of garlic minced
3 tbls all-purpose flour
1 cup red wine or 1 cup beef broth
2 cups chicken stock
2 bay leaves
1 tsp dry thyme
6 small boiling potatoes
4 carrots peeled and sliced or 2 cups baby carrots
1 cup frozen peas
1 cup frozen corn
