    I wonder, would this work with arugula instead of watercress? Or a combination of the two? I reckon the peppery flavours would work nicely together.

    Is the blender you're using bit of professional kitchen kit or is something like a Ninja 4 blade or Vitamix (would that I could afford one of them!!) Lol. I absolutely LOVE Watercress Soup, but I've never managed to get the brilliant Green colour of yours. I must have cooked the leaves too long. I'll be trying again though with your "Receipt" Thanks so much.

      Hi Essem, thanks for your comment! You could probably get away with using a Ninja or a Vitamix- but you would have to do it in smaller batches (rather than blending all at once!) The consistency may differ slightly and it might not be as smooth as a larger blender as shown, but the end result should roughly be the same! It'll just be a little more fiddly to do smaller batches :) Hope this helps!

      Thanks for sharing your lovely recipes. I have Magimix food processor medium size.for at least 20 years. I blend watercress soup in this food processor, thanks from London.

    If you can't get watercress, is it ok to use spinach instead?

      Yeah spinach is good for you and high in iron. I use stinging nettles too (if u are using nettles look up how to cook them properly before putting them in the soup)

      I almost cut two whole fingertips clean off by using a mandolin like this. I was physically stressed watching her use that.

      That’s why I hate mandolins I just prefer a proper sharp knife with the handle the correct size for your hand. Blunt knifes are dangerous as there is less control
