Black Bean&Bell Pepper Enchiladas Video 2

- 2 (15 oz.) cans black beans, drained and rinsed well
2 bell peppers, chopped
1 tablespoon olive oil
1 teaspoon cumin
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon chili powder
1/2 teaspoon smoked paprika
salt &pepper to taste
half of a onion, finely chopped
1 to 2 cloves of garlic, finely minced
2 tablespoons finely chopped cilantro(optional)
2 1/2 cups of fiesta blend shredded cheese
8 to 10 flour tortillas, or corn tortillas
2 cans of your favorite enchilada sauce, i'm using red, and green chili
Garnishes: chopped tomato, chopped green onion, finely chopped cilantro, and sour cream.
Preheat oven to 400 degrees.
In a skillet add olive oil over medium heat, then add onion,bell pepper,corn,garlic, black beans, seasonings and sauté for 3 to 5 minutes. Add 1/2 cup of your fiesta blend cheese, and stir it in, turn off burner and set aside.
In a 13x9 baking spray with cooking spray, and pour 1 cup of enchilada sauce into the bottom of a baking dish.
Fill tortilla with about 1/2 cup of black bean filling, roll up enchiladas, and place them seam-side down in the baking dish.
Continue with the remaining tortillas until they are filled., and pan is full.
Pour remaining enchilada sauce over filled enchiladas and top with the rest of your cheese.
Cover with foil and bake for 25 to 30 minutes or until the cheese is melted and the sauce is bubbly.
When done bring out and let enchiladas rest for a few minutes.
Garnish enchiladas with chopped tomato ,chopped cilantro, chopped green onion and serve with sour cream.

My Mexican relatives fry corn tortillas in hot oil first, and then soak it in red sauce and then take chicken and cheese and put them on tortilla and we roll them up sprinkle cheese on top and then throw them in the oven. Not sure if that's correct or not.

That woman is a close loved one of hers and is elderly. If you truly cared about these people, you wouldn't say things like "What's up with that lady in the background?" but instead put it Respectfully like "Who is the lady in the background?" Its clearly more polite. You would also not Assume the elderly woman can help. Some seniors have serious health conditions that make it Harder to do simple tasks. EDIT I wanted to add, sometimes middle aged, young adults and kids can also have serious health conditions that are not visible which make easy things like cleaning harder.
