We have pechay/ bokchog here in US. I always cook kare kare. You have to put string beans or french beans first, eggplants then bokchoy.
I do not know lang y am here pero ramdam kong pauwi na sa corned beef ung karne dai durog na hahaha!!! Pero i love krissy hahaha.

Nothing beats cooking kare kare in a genuine palayok. Ox tail with the cow's facial skin and tripe is the best meat combination. The flavor is simply different from the one that was cooked in a metal cooking pot. I always cook the veggies separate by blanching it in boiling water with baking soda. This is to prevent it from over cooking and easily spoiling the kare kare.

Pechay is now a very common vegetable here in the USA. There is an abundant supply in all Asian and Hispanic supermarkets. Fresh and cheap even.

Ang french beans kasi blanch nga lng yan, masarap syang crunchy. While pechay esp the stem is hindi masarap na half cook.

Kapag ganyan karami ang lulutuin mo mas sasarap yan kung i-pa-fry mo muna yung talong na ibinabad muna sa tubig para kapag ni fry mo hindi mag a-absorb ng too much oil at mas masarap parin ang sitaw kaysa string beans dahil magkaiba talaga ito ng lasa.
