*Ingredients:*
For Strawberry Jam:
Freshly Chopped Strawberries - 3/4 cup
Granulated Sugar - 1/4 cup
For Cheesecake Base:
- 1 cup Marie Biscuit Crumbs
- 1/4 cup Butter, melted
For Cheesecake Filling:
- 150 gms cream cheese, softened
- 1/4 cup powdered sugar
- Strawberry Jam - use up the entire jam prepared above
- 1/2 cup whipping cream
For Garnishing:
-Whipped Cream
-Sliced Strawberries
*Instructions:*
1. In a bowl, mix marie biscuit crumbs with melted butter. Press the mixture into the base of a springform pan to create the crust. Chill in the refrigerator for at least 30 minutes.
2. In a large bowl, beat cream cheese until smooth. Add powdered sugar and continue beating until well combined. Then add the strawberry jam and beat nicely.
3. In a separate bowl, whip the whipping cream until semi stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
4. Spread entire cream cheese mixture over the chilled crust. Level nicely with a spatula. Tap well to eliminate air bubbles.
5.Chill the cheesecake in the refrigerator for at least 3-4 hours, preferably overnight.
6. Before serving, you can optionally garnish the cheesecake with whipped cream, additional sliced strawberries or a drizzle of strawberry sauce.
