I don’t know much dear. But after cutting the mangoes we sun dried those. You can keep the pickle jar in the sun daily. We also do it to prevent growing fungus.

Good point.. Nigella sativa (black caraway).. it's also known as black cumin, nigella or kalanji, black caraway seeds.. Black cumin is slang word otherwise black cumin differs from black caraway seeds..
When you cut the mangoes or lemon add salt and termeric mix them well with your hands then leave them under the sun so water can dry for 3 days after 3 days put the oil and other ingredients
