Dumb question - if folks can hear the sound, doesn't that defeat the purpose of headphones? If you are on the plane, train or whatever, will you bother your neighbors?

Not a dumb question at all. A really good question, actually.
"Open-back" headphones leak sound out and are thus meant for quiet environments, i.e. in the comfort of your own home with no one around. They also leak sound in which means that, say for example, the sound of the AC unit humming will leak in through the earcups and you won't really get the best audio experience.
"Closed-back" headphones, on the other hand, tend to not leak sound in and out of the headphones and thus offer a basic level of 'passive' noise isolation, and as a result, can be used when out and about without bothering people around you.
