We used to raise pheasant, we used to butcher them when the leg spur was still rubbery and soft. Once the leg spur hardens the birds are tougher. But they're still good for braising.
Congrats on your 1st hunt! It's addictive next you will have dogs and enjoy wingshooting and the good work of a dog and incredible eating.

Well that was awesome. Loved to hunt upland when i had my Girl (SASHA) a Deutsche Drahthaar. RIP. . Incredible dog that dont know the word quit. But i will tell you its all about the dog. I couldn't care less if I got something i loved watching her work. I would feel bad for her to not be able to get one not me. Upland hunting was an amazing time spent afield. Respect !! Next time its Venison and HOG. Heck they both are all over down in Texas.

Pheasant and quail hunting with dogs takes the fun out of it. I mean to retrieve the bird is okay. But walking around and walking up on the birds is the first part

Next year could be an elephant hunt and smoke. Shove a tree up it's @$$ and build a rotisserie and get a tribe of warriors to spin it over a fire. Bet you never had an elephant in 'yer boot???😏
Wrap the breast in bacon, keep the meat nice and moist👈🏻 everyone loves that word 😂
I like to cut the meat in 1 inch chunks, marinate over night, wrap with bacon,onion,water chestnut.
Pheasant Romaki. Then grill till the bacon is to your liking, and done. Enjoy.
Quail > pheasant. Now did they really outfit y’all with 28 gauges? That’s a tough spread to hit with. Rare shell to find too.
