  • On the eve of 14th August it is appropriate to recognise a recipe from Bahawalpur. As some of you know Nawab Sir Sadiq Muhammad Khan V Abbas who was our Quaid Mohammad Ali Jinnah friend and even more relevant help the fledging State of Pakistan, the salaries of the new state's functionaries were paid by him, his State army protected our borders and the millions of refugees from India were housed fed and protected by him. many did step up during those first years of independence.the State of Bahawalpur was also the first state to accede to Pakistan. Pakistan on a Plate records a recipe from the Royal Kitchens in recognition of their efforts on our Independence Day.Moreover, the history of this recipe includes the essence of local spices reflecting the environmental conditions and combining in it with the finesse of high cuisine. It is also a reaffirmation of simplicity in culinary tradition is underscored by food science, the Bahawalpur family have carried forward for generations. I hope you enjoy it.I loved it.I would like to thank Shahzain Abbasi for his assistance and letting me in on family gems. Like in most households across Pakistan the women of the homes carry our culinary heritage as memory and one hopes we will be able to record most of them before they disappear.
