k3s vs k8s: What's the difference?

I tried to find material on performing rolling updates with K3s, but nothing pops out. Some say that K3s can't do rolling updates - is this true?

There are no reasons why k3s isn't suitable for production workloads. Our managed k3s service currently isn't targeting production workloads, because we don't support multiple masters and we don't support an external database for safety (plus we're still in beta at the time of writing). However, we're planning to bring both to our service in early 2021.
