    The proper way to use one of these is to place the point of the steel down on the cutting board and hold the steel vertically. Getting the proper angle is then easy, as you've cut the number of variables in half.

      "Knife and blade"? You're not making any sense at all now. The science is actually very simple on one level. You want your edge to generate the maximum unit pressure the tool is capable of in the given application. How to achieve that on the other hand? Not so simple. Angle, radius, surface finish, hardness and grain structure of the steel in question, it all enters into creating a perfect edge and the most effective technique varies from one tool and application to another. A straight razor for instance, requires the finest surface finish possible, while putting that kind of finish on a kitchen knife is usually just a waste of time. What angle to use? What level of finish to use? whether to apply a microbevel? Whether to finish on a steel, strop, ceramic or borosiicate glass rod? Angle or radius? There's a correct edge for every context and the science of understanding that context? Not so simple.

      @@MrMZaccone agree about the angle but need to hold steel point down is BS it doesn't matter .ps I'm a butcher and 4 years trade school + 20 years experience I think I should know what I'm talking about

    What does "sapphire cut" mean? Is that an abrasive coating?

      I'm not sure where the term "sapphire cut" originated, but it refers to steels with a medium-fine coarseness.
      I wouldn't describe this steel as abrasive, the cuts run lengthwise along the surface, so if you run your finger along it, it feels smooth.
      The surface is coated with something the manufacturer refers to as "dickoron" to increase the hardness of the surface, but it isn't abrasive.
      If you're looking for a steel with an abrasive coating, FDick makes a really nice diamond steel (czcams.com/video/xOwDFjLiBj8/video.html) . I have videos on both that explain the differences and when to use them.

    Hello Sir,
    I own Dick ErgoGrip and ExpertGrip knives for butchers. The length of knives are from 5 to 8 and 10 inches.
    Most work is with pork, pig meat, a little with beef. Also I own Dick RapidSteel action rod sharpener.
    Which sharpening steel do you recommend me for this knives?
    I am thinking about Dickoron sapphire cut (oval), or some regular cut..
    I need your opinion because I saw all of your videos and they are incredible great.
    Please help, and thanks for your answer.

      Hi Luka, I've never used a rapidsteel, but from what I can tell, it seems to act like a polish steel. So I'm guessing you want something a bit more aggressive.
      I'd suggest the sapphire cut, at least 12", but preferably 14" to give you a bit more room to work with. The multi-cut would also work pretty well for your shorter knives, but it wouldn't be long enough for the 10".

      Thank you for your answer, but rapid steel action set is for sharpening blunt knives. I copy this from Dick official page "Rapid Steel action: Sharpens blunt knives. Rods with special coating."
      So you think for me after using this on my knives is the best to use and buy Dickoron sapphire cut sharpener?

    Hi can you reccommend a steel for me? I use f dick boning knives for skinning when i go out shooting, sharpen them at 20degrees with a diamond lansky kit.
