We make this food in Liberia 🇱🇷 this is what we referred as the "Congau" food. Meaning the freed slaves that settled in the land that became Liberia. However, it is a known fact that Haitians were also parts of the freed slaves that settled in what is now known as Liberia. This is why the name "Congau" can now be linked to the group that makes this food. Haitians, Congolese, Carribeans, Angola, Zaire, West Indies, Black Americans all formed Liberia. We make this the exact same way
In Trinidad we use the words FuFu and TumTum for pounded Provisions- yam, plantain etc. Count Lopinot and other Haitian slave owners migrated to Trinidad (some sneaking through the borders illegally) after the Haitian Revolution. Perhaps this history accounts for the use of the word TumTum in Trinidad since fufus were already common. Thank you for your video. Would you share a recipe for the Gumbo, please?

Interesting. Why haitian people use another fruit but not cassava to make fufu? Is there no cassava planted in haitian?
