Back in the late 70's I was an intern at what was then Ernst & Ernst, now Ernst & Young, public accounting firm. One of our audit clients was a manufacturer of trigger controls for power tools, Lucerne Products, (no longer in business.). Every Friday, at 4:30 the office would congregate around the supply closet where the CEO would pour and mix cocktails for everyone, including us auditors.
When talking cocktails, I always love telling people that my favorite, by far, is the painkiller. The plethora of reactions I get always makes me chuckle.. after a sufficiently long enough pause, I let those unenlightened know what it is and what’s in it.. most often those initial looks of disapproval or genuine concern for my health and well-being (God bless ‘em) fade to wistfully imagining themselves with a glass of delicious pineapple and coconut-y goodness with a little umbrella (or as I like to call it, a flavor shader)
Live right down the street from their distillery in Ohio. Love LOVE their bourbon but dude, their actual restaurant is incredible too. They are killing it.
Watershed is doing some brilliant things. Wonderful people and great products. Their gin is my favorite. Columbus, OH is a sweet place to be with all of the awesome distilleries and breweries doing cool things.
I know you all have done it but Tom's Foolery is definitely the pride and joy of Ohio Whiskey. Their bottled in bond is just phenomenal
Facts
I live a few minutes from where Toms Foolery is produced. The locals in Mantua, Parkman and Garretsville have it on their shelves. I gotta say, I’m not a huge fan. Very “ethenoly” and bitter, (IMO) I’ll take a typical Balcones, or Wild Turkey. (But, I’m am honored and proud at Tom’s Foolery success. Cheers MB’s!
@@jdjohnson4058 I'm also NE Ohio. I bought a btl of TF, like 6 yrs ago - and it was hot/harsh firewater - as you describe (t's still on my shelf). Typical of new-producer under-aged bourbons. I appreciate that TomF is TRYING to produce a quality product, but .... do you think they deserve a 2nd chance, yet ? IIRC TF's magical back-story abt owning Booker Noah's original pot still - or whatev' - vanished in a lawsuit. No idea what their new still hardware at the new location is. My *OPINION* is that hot-harsh flavors always exist in any white-dog, but the amount is determined by the skill of the ferment-or, distiller, and the hardware.. The dissipation of these harsh notes is related to the barrel aging conditions (and an Ohio bbl warehouse might be quite acceptable - hot summer, dry cold winter).
Red Eagle, Geneva OH is another. I had one rather decent (not great) pour at their barn a few years ago. The btl I brought home was decidedly not the same => inferior to that served on-premise - barely fit for cooking.
Hate to say it - but OYO & Wateshed (both Columbus) ARE the premier OH distillers. OYO's MIchelone reverve has some delicate tasty brandy-like high-notes - odd but good bourbo (tho' $50/btl). I'm not a vodka-guy, but their rye based vodka's have a great candle-wax+spice high-notes too. IMO OYO's (Kothe?) still limits their volume and their bourbon quality. I've no problem using German(Kothe) stills for vodka & kirschwasser - but Germany s NOT a whiskey culture and Asbach( brandy) tastes liket he name sounds. Still hardware matters, and I *think* Watershed has figured out how to use theHeadframe system.
I seriously OWE Watershed a retry soon. The 2yo Watershed bourbon I bought (and finished) like 6yrs ago was decent; tho; not outstanding Clean and with a clear sense of what bourbon means,
Watershed and their now 6 year barrel has now set the Ohio standard.
Oh shit...I actually have a recent store pick from Watershed. I would say that the caramel vanilla not you get on the palate and finish is a pretty consistent flavor profile through their releases. The nose is always sweet and the nose and front palate from what I have tried is classic bourbon that starts out as cherry or orange smarties candy and then softens into the underlying fruit flavor on the 2nd sip. The recent store pick I found they labeled Dreamsicle, and if you could have a 120 proof creamsicle then this is what it would taste like. This is great stuff and you can still get the store picks for $60 which is an insane value for the proof and quality.
I have the Watershed BiB that they sell at the distillery, it has this waxy apple peel note that I've never found on anyone else's Bourbon. I love it.
I also have the limited release that is Nocino barrel finished Bourbon, and I love the nose, but the palate isn't for me. And I think this might be the proof (120s) but it burns every time I try it.
I love using their straight up nocino in a Manhattan!

Today I just snagged their cask strength rye off their social media raffle, and grabbed a BiB bourbon while I was there. Can’t wait to crack ‘em open!

So these are different mash bills. 102 is a three grain of Corn, Rye, Malted Barley. Batch 70 is a 5 grain of Corn, Rye, Wheat, Spelt and barley. The three grain is the current mash bill but the standard bourbon gets finished in apple brandy barrels for up to 2 years now. Gotta check out the Bottle In Bond that is out now too!

Went to Puerto Rico recently and they make Old fashions with dark rum instead of whiskey and they are quite tasty, if you're looking for more rum experiences. Making it with Ron del Barrilito rum, if you can find it, is especially nice
Watershed makes an apple brandy with 100% ohio apples and then a bourbon that was finished from those apple brandy casks and they are both fantastic
They just released a barrel strength 6yr finished in their apple brandy barrel . Haven't cracked mine open yet . Was a limited release.

Cocktails? Gold Rush, Daiquiri, Sazerac… so many tasty cocktails.

I'm pretty sure wheat as we know it is derived from spelt, spelt is an older grain which bread was traditionally made from a long time ago
Found a bottled in bond version of Watershed recently. Haven't tried it yet but I'm curious how it differs
Worked a bourbon tasting in Grove City(suburb of Columbus) and I was pouring their selections. The BIB in very tasty but the single barrel barely topped it. But people constantly came back for their premixed old fashion.

I *believe* that Watershed has a Headframe continuous still in recent years. They may be part of the diff.
They run bourbon on the column still. They have both column and pot, but mainly use pot for their gins. The difference between the batches the boys are tasting is, the earlier one is 5 grain mash bill the other is 3 grain.
Has anyone had the Watershed Barrel strength? I picked up a bottle this past winter and was waiting for a nice occasion to open it.
I purchased a bottle of this about 6 years ago, it was nothing like you guys have described. The only thing I remember good about it was it had a sweet corn aftertaste but the green grass and hey was not very pleasant to me...

Rum and Gin are worth exploring if you are into whiskey and want a palette shift

Question. I have a few bottles of bourbon. I discovered today a couple of bottles had 1 or 2 flies in them one bottle is somewhat old but not that old the other is only a couple months old. I always keep the tops on. I pour and close that's it. Can anyone tell me why this is happening? I don't have flies in the house and the second bottle with one fly was opened in winter. Thanks
