Koofteh Berenji (Persian Rice Meatball) - Cooking with Yousef

- Hi friends, today we are making Koofteh Berenji (or Berenje) ((کوفته برنجی)) which is "Persian Rice Meatball". It's a wonderful dish, full of flavor and fun to make.
Ingredients List:
- 2 pounds of ground beef (15-20% fat is what I use)
- 1 Cup pre-cooked rice (most cook before mixing)
- 3/4 cups split peas pre-cooked (most cook before mixing)
- 2 onions
- 16-20 Aloo Bukhara "Persian Sour Plum" (substitute Sour Plum if you cannot find aloo)
- 3 Tablespoons of Tomato Paste
- 4 Tablespoon of Dried Herbs (equal amounts of Savory, Parsley, Basil, Chives, Tarragon)
- 1/2 Cup Raisin
- 2 Teaspoon Black Pepper
- 1/4 Teaspoon Red Pepper
- 2 Teaspoon Turmeric
- 2 Teaspoon Salt
- 5 or 6 Tablespoon Liquid Saffron

Oh, this looks good and made its way to my to-cook list right away. I'm fond of Persian cuisine because of its lovely spices and relatively few and available ingredients. The sour plums give me a headache, though. I'ld like to use them because I think they will fit well into the dish, but I can't find them anywhere (I'm in Europe). Having considered a range of alternatives I ended up with rhubarb. Yousef, do you think this will work?

What an interesting dish! I would definitely like to try it but some of the ingredients I wouldn’t be able to find them. Maybe with a small tweak I could make it work but it wouldn’t be like the original recipe.

It would be helpful to let you viewers know that the "yellow split peas," called "lapeh dir paz" are the same thing as Channa Dal that can be found in any Indian grocery. If they use yellow split peas as Americans know them, they will turn to mush.
