    Ingredients:
    Serves 3 - 4 pax
    Ingredients (A)
    -------------
    Mix the ingredients below together.
    -------------
    280g of snapper meat - sliced thinly
    1 tablespoon of fresh ginger juice
    1/2 teaspoon of salt
    A few dashes of white pepper
    Ingredients (B)
    -------------
    Dissolve the ingredients below together then add marinated fish from Ingredients (A) and coat the fish well. Then proceed to deep fry the fish until golden brown and crispy.
    -------------
    1 cup (125g) of cornflour (can be replaced with potato flour)
    1/2 cup (125ml) of water
    Ingredient (C)
    -------------
    Fry until golden brown over low heat and then set aside once done. Use as garnishing once the dish is ready.

    Some cooking oil
    15g of young ginger - julienne
    Ingredients (D)
    -------------
    This part of the ingredients is to make the sauce. Then mix the fish in the sauce and toss to coat the fish well.

    Use the oil remaining from (C)
    3 cloves of chopped garlic
    1/2 cup (125ml) of water
    1 tablespoon of oyster sauce
    2 tablespoons of light soy sauce
    1 tablespoon of premium dark soy sauce
    1.5 teaspoons of sugar
    Some cornstarch solution

    I made this recipe and it is wonderful. It was a bit salty for me, so I’m going to try it again without as much salt and maybe a little less soy sauce. The fish was truly nice and crunchy. Thank you.

    I had always Believed that They added a Stock of some sort Beef, Fish, Chicken

    I would love to try this dish. Everything you cook makes me want to run to the kitchen and try it. Can you tell me what is the best way to extract the juice from ginger please? This is the first time I have seen it used.

      Hi Mike. Thanks so much for watching our videos. To extract ginger juice, you can grate some ginger - if you don’t have a grater, use the edge of the spoon to carve the ginger flesh out. Then squeeze the juice out. Hope this help.

    Omg, so cos it's done with cornflour, if you use gluten free oyster sauce and gluten free soy sauce, you have gf Chinese fish... my daughter said it fabulous. I loved it cos I can eat it. Other half was impressed. Now about to post photos to show off to everyone what a fab pan Asian meal we had. Cos I served it with a spicy Thai green pawpaw salad. I will be doing this again.

    I was making mine for the first time and I'm a beginner in the kitchen👍 so I am not sure what I did wrong that turned out that when the fish was frying it my fish shrink and I wanted like your fish in the recipe bigger not mini. Can u give me a tip please?

    I tried your recipe. It is really easy but it came out too salty for my elderly parents. Any suggestion to replace the soya sauce for the sauce coating and make it much less salty taste.
