Question?… when you make sourdough breads do you used some little bit of Sugar and tiny bit of Yeast to rise better dough ?… My home made sourdough is Whole wheat yeast Starter is good and healthy. I been using it for 3 years. But for making any sourdough breads it won’t rise up enough?… Do you have any suggestions?… thank you
Lovely bread art. May I ask how hydrated the dough was, in percentage? I think I am using too much hydration(70/75%) that doesn't help keep the shape but the inside is great.

As long as the clay baker is sufficiently hot when the dough is put in, the dough won't stick. I typically heat preheat them to 500ºF for 25-30 minutes before putting in the dough. Only on the first couple of uses is it sometimes necessary to dust with flour first.
I have a Baker like that and never knew I could use it for my bread. I bought a cast iron Dutch oven for my bread. Do I heat the Baker up as I preheat?

I've had great results at 75 to 85 percent hydration. I find a long proofing in the fridge helps as the dough is cool and holds shape better.
